  1. The first step is to soak the quinoa in warm water, then rinse thoroughly under the tap to avoid bitterness.
  2. Pour in cold water, maintaining a 1:2 ratio, and cook. Usually 20 minutes is enough to get a crumbly porridge. Cool.
  3. Remove damaged areas from clean and dried lettuce leaves and chop them.
  4. Rinse the avocado, remove the peel and pit (they are not used in dishes), and cut the pulp into arbitrary pieces.
  5. Remove the zest from the lemon using the large side of a grater, squeeze out the juice and mix with olive oil and garlic, passed through a press.

Pour the dressing over the mixed and laid out ingredients.

  4. Finely chop the Chinese cabbage, peel and grate the carrots.
  5. Mix in a heap, add a little salt and mash to get juice. Cover fruit pieces.
  6. Wash small tomatoes, cut off the stem and divide into halves. Arrange beautifully on a platter.
  7. Sprinkle sprouted quinoa on top.
