Donbass-style minced meatballs: step-by-step recipes with photos

Donbass-style cutlets have been a very recognizable dish for a long time. They were considered the hallmark of Donbass, and every Soviet restaurant was obliged to add this treat to its menu. Today there are many variations of these cutlets.

How to cook cutlets in Donbass style

The classic recipe for Donbass-style cutlets includes a mixture of two types of meat - beef and pork in equal proportions. The treat has a textured surface and a very tender interior with hot oil. There are several nuances that can affect the final result:

  • You cannot use frozen meat, the base must only be fresh and without veins;
  • It’s better to make breadcrumbs yourself; to do this, take a fresh loaf, fry it in the oven and grind it into coarse crumbs - one loaf will be enough for 1 kg of meat;
  • The oil for filling the cutlets must be of high quality; a poor product may release moisture during the cooking process, in which case the meat base will simply burst.
