  • a kilogram of fresh strawberries;
  • kilogram of granulated sugar;
  • half a lemon;
  • teaspoon of gelatin.

Before you start preparing it, you need to carefully select all the strawberries. There should be no signs of rot on them. When all the berries have been sorted, you need to remove the leaves and stalks from them. Particularly large strawberries should be cut into two halves after removing all the leaves.

Advice! The prepared berries must be weighed again. Indeed, in the process of selecting spoiled berries, significantly less of the original kilogram may remain.

In this case, you need to either reduce the amount of sugar or add more berries.

Place all selected berries in a clean deep bowl. An enamel pan is best suited for this. Sugar is sprinkled on top of the berries. The strawberries are left in this form for 24 hours. During this time, under the influence of sugar, the strawberries should give up all their juice.

When the specified time has elapsed, you can start cooking. The whole process can be divided into three stages:

  1. At the first stage, the strawberries are boiled for 5 minutes over medium heat.. At the same time, they must be constantly stirred with a wooden spatula. She also needs to remove the foam that will form during the cooking process. Cooked berries should be left for 6 hours at room temperature. After this, they must be crushed in a blender or rubbed through a sieve. Then cook again for 10 minutes and cool for 6 hours.
  2. At the second stage, our almost finished strawberry delicacy needs to be boiled again for 10 minutes. But before that, you should add lemon juice squeezed from half a lemon and gelatin previously dissolved in water. Mix the finished jam thoroughly and leave to cool.
  3. While the finished jam is cooling, you need to prepare a container for it. To do this, take clean jars and sterilize them in any convenient way. If the jars are sterilized over steam, then they must be thoroughly dried by placing them upside down. When the strawberry jam has cooled down sufficiently, pour it into prepared jars and close the lids tightly.
Important! If jam, which contains gelatin, is not poured into jars in time, it may take the form of jelly.

Such a frozen delicacy is very difficult to place in jars. Therefore, as soon as it cools down, it must be closed immediately.

Strawberry treats sealed in jars should be stored in a cool place.
