  1. Wash the quince thoroughly and dry it. According to this recipe, we do not peel the fruits, but the centers must be removed. Cut the fruit into quarters and then into cubes.
  2. There is no need to throw away the trimmings of the peel and core with seeds, since they contain a lot of essential oils (tannins in the seeds) that give a special aroma to the finished jam. Therefore, we will cook syrup based on them and pour it over the fruits. Place the peels and centers in a saucepan, add water and cook for a quarter of an hour. Then place the contents of the pan in a colander to strain out the syrup.
  3. Immediately place the chopped quince into the hot syrup, place the pan on the stove and simmer for at least 10 minutes over medium heat. Remove any foam that appears with a slotted spoon or spoon. Then strain off the liquid.
  4. Pour it into a saucepan, add granulated sugar and boil for 5-6 minutes.
  5. Pour the sweet liquid over the fruits, cook for 10 minutes and leave for 10-12 hours, covering the vessel with a towel.
