  1. Eggplants (3 pieces) are cut into two parts, sweet peppers - into four parts. Place the vegetables on a baking sheet, put garlic (10 cloves) on top.
  2. The baking sheet is placed in the oven for 25 minutes.
  3. During this time, cut one onion into strips and grate two carrots.
  4. Onions and carrots are fried in a frying pan with the addition of sunflower oil.
  5. Dip the tomatoes into boiling water for a few minutes, then peel them and cut the pulp into cubes.

Caviar with parsley

  1. First you need to prepare parsley oil, which will give the eggplants an unusual taste. To do this you will need 5 sprigs of this greenery, 1 clove of garlic, 3 tbsp. l. olive oil, salt and black pepper to taste.

Another way to simplify the process of preparing caviar is to use a multicooker.

  1. Eggplants in the amount of 5 pcs. cut into cubes and place in a container. If you use mature vegetables, you must first peel them. Fill the container with water so that it covers the vegetables completely, add salt and place a weight on top.
  2. Two onions are peeled and finely chopped. You also need to peel two carrots and grate them.
  3. The multicooker is turned on to the “Frying” mode and vegetable oil is poured.
  4. First, fry the onion until golden brown, then add the carrots.
  5. Bell peppers (5 pcs.) are cut into pieces, removing the stems and seeds, and placed in a slow cooker.
  6. Tomatoes (4 pcs.) are placed in boiling water, then the skin is removed and the pulp is finely chopped.
