- medium-sized eggplants - 5 pieces;
- red bell pepper – 2 pieces;
- large ripe tomatoes - 6 pieces;
- large onions – 2 pieces;
- garlic – 4 cloves;
- granulated sugar – 1 tsp;
- chopped dill and parsley - 4 tbsp. l.;
- ground hot paprika – 0.5 tsp;
- ground sweet paprika – 1 tbsp. l.;
- ground black pepper and salt to your taste.
All greens and vegetables should first be washed under running water. Peel the eggplants and cut into small cubes. Then place the chopped pieces in a bowl of the appropriate size, sprinkle with kitchen salt and leave in this form for 20 minutes. After this, the eggplants are placed in a colander and left to stand for a while to drain the water along with the bitterness.
Tomatoes are poured with boiling water, allowed to stand for a while and the skins are removed. The onions should be finely chopped and fried in oil.
