Spotykach is a drink that is often confused with liqueur. This is a hot, sweet alcoholic drink based on fruits and berries with sugar, doused with vodka. Ukraine is considered its historical homeland.

What is the difference between spotykach and nalivki

Usually spotykach is made on the basis of such fruits and berries as currants, strawberries, raspberries, grapes, plums, cherries, sweet cherries, apricots, cranberries and rowan berries, etc. In addition, herbs and spices are also used: anise, coffee, nutmeg , mint and many others.

Important! The main difference between spotykach and homemade tinctures and liqueurs is the heat treatment of the raw materials before bottling them.Moreover, as a rule, not only the berries are heated, but also the alcoholic component - vodka or moonshine.

If in terms of strength it is between tincture and liqueur, then in terms of sweetness spotykach is closer to liqueur - due to its sweetness and lower strength it is usually considered a “female” drink.

Spotykach: classic recipe

Ingredients:

  • any fruits or berries – 1 kg;
  • strong alcohol (vodka or moonshine, without a pronounced odor) – 0.75–1 liter;
  • granulated sugar – 350 g;
  • water – 0.5 l.

Preparation:

  1. The fruits are washed (cut into pieces if necessary), put in a saucepan, pour in about 200 g of sugar, pour in water and put on fire.
  2. After boiling, reduce the heat and cook for another half hour, stirring regularly.
  3. Remove the pan from the heat, add alcohol and return to the heat.
  4. After boiling, remove the mixture from the stove.
  5. Leave to cool under the lid. At this point, you can add more sugar to taste.
  6. Pour into a jar or bottle (along with the berries), seal, and move to a dark place for two weeks. Shake the bottle every 2-3 days.
  7. Strain the spotykach, pour into containers, close tightly and leave for three days (at least).

Spotykach with rowan according to Varangian recipe

According to the recipe, you need the following:

  • rowan – 500 g;
  • vodka or moonshine – 1 liter;
  • water – 0.3 l;
  • granulated sugar – 500 g.

Preparation:

  1. If the rowan was collected before frost, it is placed in the freezer overnight.
  2. The berries are washed, filled with water, and sugar is added.
  3. Boil the berries for an hour (until the peel bursts), after boiling, reduce the heat.
  4. Pour vodka into the broth (it is better to remove the pan from the stove at this moment) and bring to a boil, then remove from the heat.
  5. Allow the broth to cool and pour into a jar along with rowan.
  6. They insist for two weeks.
  7. Then it is poured into another container, the rowan is squeezed through cheesecloth, the liquid is bottled and hermetically sealed.
  8. Leave it for another two to three weeks, or better yet, several months.

Spotykach from currants

The following ingredients are needed:

  • currants – 1 kg;
  • granulated sugar – 1 kg;
  • strong alcohol – 1 liter;
  • water – 500 ml.

Preparation:

  1. First, spoiled berries are selected, then they are washed and dried.
  2. Transfer to a container and knead until smooth. Squeeze the juice from crushed currants using gauze.
  3. Combine water and sugar in a saucepan and make a thick sugar syrup.
  4. Currant juice is poured into syrup and boiled until boiling.
  5. Remove the container from the heat, add alcohol, stir and continue cooking.
  6. Without bringing to a boil, cook until the mixture thickens, then remove from heat and allow to cool.
  7. Pour into bottles and put in a cool place. Insist for several weeks.

Cherry tripper

The recipe for cherry spottykacha is very simple. To prepare it you need the following:

  • cherry – 300 g;
  • prunes – 50 g;
  • strong alcohol – 0.5 liters;
  • granulated sugar – 300 g.

Preparation:

  1. The cherries are covered with sugar and left for several hours.
  2. Then place the container with the cherries on low heat and cook, stirring, until the sugar is completely dissolved.
  3. Add prunes and remove the pan from the heat, allow to cool.
  4. Berries with syrup are placed in bottles and filled with alcohol.
  5. Let it brew for 10–15 days.
  6. Filter and bottle again. Leave for 3-4 days.

Mint spottykacha recipe

Required ingredients:

  • mint – 70 g;
  • strong alcohol – 1 l;
  • granulated sugar – 200 g.

Preparation:

  1. Sugar is melted and syrup is made. Add mint there and cook for another 15–20 minutes.
  2. Mix vodka with syrup, turn off the stove, and leave the mixture to cool under the lid.
  3. Bottle and leave for 5-7 days.
  4. Store in a dark place.

Spottykach from prunes

To prepare you will need:

  • prunes – 400 g;
  • granulated sugar – 400 g;
  • vodka – 500 ml;
  • water – 300 ml.

Preparation:

  1. Prunes are washed thoroughly.
  2. Syrup is made from sugar and water.
  3. The syrup is cooled and mixed with prunes and the alcoholic component.
  4. Pour into a jar or bottle and leave for 2 weeks.
  5. The liquid is filtered and poured back into bottles.

Raspberry spottykacha recipe

For the drink you will need:

  • raspberries – 1 kg;
  • granulated sugar – 1 kg;
  • water – 700 ml;
  • strong alcohol – 750 ml;
  • vanillin - to taste.

The spotykach is prepared like this:

  1. Vodka is infused with vanilla for two days.
  2. The berries are pre-sorted, then mashed with a spoon and transferred to a layer of gauze. Then the juice is squeezed out.
  3. Syrup is made from water and sugar.
  4. The syrup is mixed with juice and brought to a boil.
  5. Alcohol is poured into the mixture removed from the heat and put back on the stove.
  6. Stirring, heat over low heat, without bringing to a boil.
  7. Bottle and seal tightly.

Fragrant mint spottykach: recipe with vanilla

The recipe for a mint drink with the addition of vanilla differs little from the recipe without vanilla.

To prepare you will need:

  • mint – 70–100 g;
  • vodka – 1 liter;
  • granulated sugar – 200 g;
  • vanilla - to taste.

This variation of the drink is prepared as follows:

  1. Vanilla is poured with vodka and left for two weeks.
  2. Prepare a syrup with the addition of mint.
  3. After adding mint, cook the syrup for another 15 minutes.
  4. The tincture is first filtered and then mixed with syrup, cover the pan with a lid and leave to cool.
  5. Pour and leave to brew for 5–7 days.

Recipe for spotykacha with lemon

To prepare you will need:

  • lemons – 5 pieces;
  • vodka – 0.75 l;
  • granulated sugar – 400 g;
  • water – 250 ml;
  • spices - optional.

Prepare as follows:

  1. Wash the lemons, cut off the zest and cut out the pulp.
  2. Water and sugar are mixed and boiled until completely dissolved.
  3. Add lemon pulp, cut into pieces, and half the zest to the syrup.
  4. Boil for another 10–15 minutes and add alcohol.
  5. Leave the mixture covered until completely cooled.
  6. Pour into a jar and leave for a week.
  7. Strain, squeeze out the lemon and leave for another 3-4 days.

Spotykach from apricots

Since this recipe is essentially a basic one, you can change the ingredients to suit your taste. In this version for preparation you will need:

  • apricots – 1 kg;
  • strong alcohol – 0.75 l;
  • granulated sugar – 400 g;
  • water – 0.5 l.

Prepare this way:

  1. The berries are pitted and washed.
  2. Then put the apricots in a saucepan, add sugar and water and put it on the fire.
  3. After boiling, reduce the heat to low and cook the mixture for another half hour, remembering to stir.
  4. Pour vodka into the berry syrup, heat it almost to a boil and turn off the heat.
  5. The drink is allowed to cool under the lid, then poured into jars and sealed.
  6. Leave for 10–15 days.
  7. Then the spotykach is filtered and bottled.
  8. Leave again for two weeks.

Nut tincture spotykach

This recipe is called spotykach rather arbitrarily, since it is actually a tincture. For preparation:

  • walnuts – 500 g;
  • vodka – 0.75 l;
  • granulated sugar – 400 g;
  • fruit pits - 10 peach or 20 any other fruits;
  • spices - to taste.

Prepare as follows.

  1. Walnuts are divided into several parts and filled with vodka. Leave it in the sun for a month, then filter it.
  2. Add sugar, crushed fruit seeds, and spices to the strained tincture, mix and leave for a week.
  3. Shake the tincture once a day.
  4. Then filter, bottle and seal tightly.

Coffee drink spotykach

To prepare you will need:

  • coffee – 120–150 g;
  • water – 1 liter;
  • vodka – 0.5 liters;
  • granulated sugar - 500 g.

Preparation:

  1. Ground coffee is poured with cold water and left for a day.
  2. The liquid is filtered and boiled for 10–15 minutes.
  3. Allow to cool, strain again, add sugar and cook over low heat for 5 minutes.
  4. Add the alcohol component and return the pan to the stove.
  5. Cook without bringing to a boil. After steam appears, remove the pan from the stove.
  6. Allow the drink to cool under the lid and pour it.
  7. Ideally stored in a cellar or refrigerator, but you can get by in any dark and cool place.

Cranberry liqueur spotykach

It is prepared in the same way as with raspberries, since this is a standard recipe.

How to make spotykach at home with chokeberry

You will need the following ingredients:

  • chokeberry – 1 kg;
  • granulated sugar – 1 kg;
  • strong alcohol – 1 liter;
  • water – 750 ml.

It is prepared in the same way as blackcurrant spotykach:

  1. The berries are sorted, washed, cleared of debris and allowed to dry.
  2. Transfer to a container and knead until juice appears. Transfer the crushed rowan onto cheesecloth and squeeze out the juice.
  3. Boil syrup.
  4. Pour rowan juice into the syrup and bring the resulting mixture to a boil.
  5. Remove from heat, pour in vodka, stir and return to the stove over low heat.
  6. Without bringing to a boil, keep on the fire until the mixture thickens, then remove from the stove, cover the pan with a lid and allow to cool.
  7. Pour into bottles, seal and store in a cool, dry place. Let it brew for 7–10 days.

Plum spotykach according to the classic recipe

The following is required:

  • plums – 1 kg;
  • granulated sugar – 500 g;
  • water – 1.5 l;
  • vodka – 0.5 l.

Prepare as follows:

  1. The plums are washed, pitted, cut and allowed to dry.
  2. Place plums, sugar and water in a saucepan.
  3. After boiling, cook for 20 minutes.
  4. Allow to cool, pour in vodka and stir.
  5. Pour and leave for 10–15 days.

Unusual recipe for spotykach with nutmeg and cloves

According to this recipe, the drink is made only from spices, without adding berries and fruits.

Ingredients:

  • cinnamon and cloves – 5 g;
  • nutmeg – 10 g;
  • vanilla – 20 g;
  • vodka – 0.5 l;
  • granulated sugar – 400 g.

The tincture is prepared as follows:

  1. For two weeks, the vodka is infused with spices, while shaking the container with the drink daily.
  2. After this, the mixture is filtered, sugar is poured into it and boiled.
  3. Filter the liquid again and pour it into bottles.

How to make spotykach at home with orange zest

Orange zest is added to an anise-based drink. However, if desired, it can be added to almost any recipe - for example, as a base for infusing vodka.

To prepare you will need:

  • anise – 50 g;
  • vodka – 1.5 l;
  • granulated sugar – 2 kg;
  • water – 3 l;
  • orange zest – 10 g;
  • cloves, cinnamon, other spices - to taste.

Prepare as follows:

  1. The anise is washed, ground and poured with vodka. Infuse for three to five days, then filter.
  2. Mix water and sugar and make sugar syrup.
  3. Tincture and spices are added to the hot syrup.
  4. Pour into jars and leave to brew for 4-5 days. The drink is shaken daily.
  5. Strain, pour into bottles and put in a dark place for several months.

Storage conditions for ladies' drink

The drink can be stored for three years, but long-term storage is possible only in a cool place, away from sunlight.
