How to make Pyatiminutka jam from pitted cherries

Dessert made from pitted cherries is very popular; it can be prepared according to any recipe. The main thing is that the berries in the finished product retain their integrity, and the jam does not turn out to be a shapeless mass. Prepare for the winter only from high-quality raw materials and over low heat.

Fruits are often damaged by pests. In appearance, the surface may show no signs of damage, but the flesh is spoiled. Before processing, the fruits are placed in lightly salted water with the addition of citric acid or vinegar. Leave in the solution for 10-15 minutes. The procedure will not affect the taste of the dessert, and the pests will abandon the berries.

Only ripe cherries are taken, without mechanical damage, so that there are no rotten areas. The drupes are washed well and scattered in a thin layer on a fabric surface. Leave until the moisture evaporates. For “Five Minutes,” pitted cherries are used.

They are removed with a special device or improvised means: a pin, a hairpin, a cocktail straw. The main task is to damage the pulp as little as possible and preserve the juice. Before discarding the seeds, boil them for 30-40 minutes in a small volume of water. The resulting decoction is added to the finished dessert to add flavor.

To make jam, use aluminum, tin or copper utensils. An enamel container is not suitable, since even with thorough mixing there is a risk that the mass will burn to the bottom and the taste of the product will be spoiled. Preference is given to wide dishes with high edges. The workpiece should not occupy more than half the volume of the container.

When the jam boils, foam rises on the surface. If the pan is not deep enough, foam may end up on the outer walls of the pan and on the stove. During the cooking process, the foam is completely removed as it appears. This is what causes the jam to ferment.

Important! Before adding the finished jam, jars are washed with baking soda, then with detergent and sterilized along with the lids.
