There are several recipes for making chokeberry jam. It is important to choose simple cooking methods with the right ratio of ingredients. Over time, you can change the number of ingredients and prepare a sweet treat to your own taste.
To make chokeberry jam tasty and not bitter, you must follow some rules for its preparation:
- For a sweet treat, choose well-ripened, evenly black berries.
- To get rid of hardness, berries are doused with boiling water and kept in it for several minutes.
- To get rid of the bitter taste of chokeberry, a large amount of sugar is added to the jam. A ratio of 1.5:1 is the minimum.
- To preserve the taste of the fruits throughout the winter, they are sealed in jars.
- To improve the taste of black berry jam, apples or other fruits are added to it.

Classic chokeberry jam for the winter
To prepare chokeberry jam, the recipe uses the simplest ingredients in small quantities. They are combined and boiled.
Ingredients:
- chokeberry – 1 kg;
- sugar – 1.5 kg;
- water – 2 glasses.
Before cooking, chokeberries are sorted, washed under running water, and allowed to drain.
Next, berry jam is prepared as follows:
- Place the berries in the bowl of a food processor and grind until smooth. You can grind the fruits by hand through a sieve.
- Add water to the black berry mass, pour the mixture into a saucepan and place on the stove.
- Cook for 5-7 minutes.
- Add sugar to the boiled berries and mix. Cook the sweet mixture over high heat for 5-7 minutes. Then set aside, let it brew for about half an hour and boil for another 5 minutes over low heat.
Antonovka jam with chokeberry
This delicacy turns out thick and tasty. Apples will not allow the rowan bitterness to appear, but a slight tartness will be present in the taste.
To prepare jam from apples and black rowan, take the following ingredients:
- apples (Antonovka) – 2 kg;
- chokeberry – 0.5-0.7 kg;
- granulated sugar – 1 kg.
To preserve the product for the winter, jars are prepared. They are washed well and sterilized over steam, as are the lids. Then they start making jam.
Antonovka is washed, the stalks are removed and cut into several large pieces. There is no need to remove the peel and seeds.They contain pectin, which will make the jam jelly-like and homogeneous. This substance is also found in mountain ash, which is why its jam has a thick consistency.
Chokeberry berries are also cleaned of debris, sorted and washed under running water.
Next, the jam is prepared as follows:
- Pour 1000 ml of water into a deep saucepan with a thick bottom. Apples and chokeberry fruits are added to the liquid.
- Boil the fruit mixture for 15 minutes until the apples soften.
- After the mixture is allowed to cool slightly, rub it through a sieve to obtain a clean puree without pulp. An equal portion of sugar is added to it.
- Pour a glass of water into a saucepan with a thick bottom, boil it, and spread the berry mass on top. Turn down the heat and cook the sweet mixture for no more than half an hour, stirring.
As soon as the jam becomes dense enough, it is distributed into jars and put away for storage: rolled up lids - in the pantry, nylon lids - in the refrigerator.
Black rowan jam: filling for pies
For this recipe, take chokeberry and sugar in a 1:1 ratio. The fruits are washed under running water, placed in a colander and allowed to drain.
Only in this case will the jam be thick enough to be used as a filling for baked goods.
Preparation:
- Sugar and chokeberry are combined in a 1:1 ratio. Set the pan aside for several hours - the berries should release their juice.
- After simmering for 5 hours, the sweet berry mixture is placed on the stove and simmered over low heat for 60 minutes after boiling.At the same time, the jam is constantly stirred to prevent burning.
- As soon as the jam thickens, remove it from the stove and cool. Afterwards the berries are ground in a blender.
- Place the chokeberry puree back into the pan and simmer over low heat until the juice has completely evaporated, about 15-20 minutes.
The finished jam is sealed in sterilized jars or stored in the refrigerator. The twists are cooled in the kitchen at room temperature, after which they can be transferred to the pantry or cellar.
Rules for storing chokeberry jam
Sweet desserts with a high sugar content are stored well and for a long time. Chokeberry jam for the winter, rolled up in jars and sterilized, can be placed in the pantry and stored there for a year to 2 years. It is important that the temperature in places where jams are stored does not rise above + 12 C°.
If chokeberry jam is distributed into jars, but not sterilized, then such a product can be stored in the refrigerator for up to 6 months. Periodically, the jar must be opened and ensure that a gray film does not form on the surface of the jam. It can be easily removed with a spoon. If there is enough sugar in the dessert, the chokeberry confiture will not mold.
