The cooking process is extremely simple and does not take much time. We cut the tomatoes into slices, finely chop the dill, and cut the garlic into slices. Boil water with salt, immediately after turning off the heat add vinegar. Pour marinade over vegetable mixture.
Once cool, place the dish in the refrigerator and let it marinate for an hour. Quick green tomatoes are ready. You can immediately serve a delicious appetizer on the table or wait until your guests arrive to show off your culinary skills.
This recipe uses onions instead of garlic, but they marinate just as quickly.
Quick with basil
For 3 large green tomatoes you need:
- green sweet pepper;
- red onion;
- basil greens 3-4 sprigs;
- for the marinade: a tablespoon of dry pickling spices and vegetable oil, 0.5 cups of apple cider vinegar, a teaspoon of sugar.
Cut the pepper and onion into thin slices, cut the tomatoes into quarters, and finely chop the basil. Mix all the vegetables. We tie the spices in a gauze bag and place it in the mixture of ingredients for the marinade, which we bring to a boil. Simmer over low heat for 5 minutes. Pour the marinade into the vegetables and let them marinate under the lid for an hour, preferably in the refrigerator.
Lightly salted without vinegar
This lightly salted green tomatoes quick preparation, since the dish can be served on the table within a day. Sometimes they are called daily allowances.
For a kilogram of green tomatoes you need:
- 2 heads of garlic and the same amount of carrots;
- 1 bunch each of celery and parsley;
- for brine: 3 glasses of water, 30 g of salt, 2 tbsp. spoons of sugar, dried dill;
- For spiciness, add ground black pepper.
We cut the tomatoes into large slices, the garlic into slices, and the carrots into strips. Finely chop the greens. Since we are preparing the product for immediate use, without storing it for the winter, it is not necessary to sterilize the jars. It is enough if they are clean and dry.Lay out the vegetables in layers, not forgetting to sprinkle them with herbs and season with pepper.
For the brine, mix all the ingredients and let it boil.
If you like the taste and smell of spices, you can also add them to the brine.

Quick pickled tomatoes

For 2 kg of tomatoes you need:
- 100 g 9% vinegar;
- 110 ml vegetable oil;
- 2 teaspoons of hot mustard, not to be confused with mustard powder;
- 2 teaspoons each of salt and ground coriander;
- teaspoon ground pepper;
- 6 tbsp. spoons of sugar;
- 1-2 heads of garlic;
- favorite greens to taste.
We cut the tomatoes into halves or quarters, depending on the size. Place in a saucepan, add salt and sugar and let the juice simmer. Add the rest of the spices and herbs, oil, crushed garlic, chopped herbs. Mix thoroughly. We put it under pressure. Let it sit in the room for a day and another 2 to 4 days in the cold. Agree, this is very fast for pickled tomatoes.
The following recipe is not called glutton tomatoes for nothing. In just 5, maximum 7 days you get a very tasty snack.
Marinated tomatoes are delicious
For 2 kg of tomatoes you need:
- 2-3 heads of garlic;
- 2 tbsp. spoons of salt and sugar;
- 140 ml 9% vinegar;
- 3-4 pods of hot pepper;
- a bunch of parsley and celery.
We cut the tomatoes into slices, pepper into rings, finely chop the greens, and pass the garlic through a press. Mix the vegetables, after adding all the other ingredients. Let it soak in the juice in the room, covering it with a lid.
You don’t have to add water; the juice that comes out will be enough.
After a day, transfer them to jars to put them in the refrigerator.
After 5 days, you can already try the snack, but it is better to let it sit for another couple of days, if, of course, your family can stand it.
Salty in a bag

You can do this the traditional way, but then you will have to wait quite a long time. There is an interesting pickling recipe; if you use it, you will only have to wait 4 days for the finished product. We put no more than 1 kg of tomatoes in each bag, so the ingredients are given exactly for this amount.
For every kilogram of tomatoes you need:
- Art. a spoonful of salt;
- teaspoon of sugar;
- a couple of heads of garlic;
- fresh dill - quantity as desired.
Preparing tomatoes for pickling. To do this, wash them and remove the stalk, cutting out a little tomato pulp at the point where it is attached to the fruit. Place the tomatoes in a bag, add salt, sugar, chopped dill and coarsely chopped garlic.

- allspice, dill in umbrellas, horseradish leaves, hot pepper to your own taste.
In this preparation, the tomatoes remain whole, the peppers are cut into rings, the garlic into slices, the horseradish leaves are divided into parts, and the dill umbrellas are left whole.
Place the herbs, garlic and peppers in a pickling container, and lay out the tomatoes. Prepare the brine: mix the remaining ingredients with water and pour into a container. We install oppression.
