You will need:

  • 2 kg of sweet beets;
  • 1.5 kg of tomatoes;
  • 5-6 pieces of sweet bell pepper;
  • 3-4 pieces of hot red pepper;
  • 7 cloves of garlic;
  • 30 g salt;
  • 100-120 ml vegetable oil;
  • about 2/3 tsp. vinegar essence.
Advice! If the beets are not very sweet, you can add 50 g of sugar.

Preparation:

  1. All vegetables are washed and cleaned of all excess parts.
  2. Peeled beets are cut into strips or grated for Korean carrots.
  3. Over medium heat, simmer it in a frying pan with oil for about 20 minutes.
  4. The tomatoes are put through a meat grinder, and the peppers are also cut into strips.
  5. After 20 minutes, add chopped tomatoes to the frying pan and simmer for another 20-30 minutes.
  6. Then add both types of peppers and heat the vegetable mixture for another quarter of an hour.
  7. Finely chopped garlic is added last and after 5 minutes turn off the heat.
    Attention! Vinegar essence can be added either at the last minute of cooking to the total vegetable mass, or literally drop by drop into each 0.5 liter jar before seaming.
  8. When hot, the spicy beetroot appetizer is placed in sterilized jars and rolled up for the winter.

  • 1 chili pepper;
  • 1 liter of water;
  • 2 bay leaves;

  • 6 cloves of garlic;

  • 15 g sugar;
  • a pinch of cumin and saffron.

Manufacturing:

  1. Root vegetables are thoroughly washed, dipped together with the peel in boiling water and blanched for 18-20 minutes.

  3. Peel the skin, which is easily removed on its own after this procedure, and cut into thin circles or cubes.
  4. At the same time, prepare the marinade. Dissolve sugar and salt in a saucepan with hot water. After boiling, add all the spices, boil for 5 minutes and leave to steep under a closed lid until it cools.
  5. The beets are placed in clean and dry jars along with chopped garlic, pepper and herbs, and poured with the infused marinade.
  6. Move the jars with the lids on into a pan of water, put on heat and sterilize for 25 minutes.

  • 500 g baked and peeled eggplants;
  • 500 g apples with core removed;

  • 5 cloves of garlic;
  • 30 g salt;
  • 75 g sugar;
  • 180 g vegetable oil.

Preparation:

  1. Boil the beets in their skins until fully cooked (the flesh should be easily pierced with a fork) for about 1 hour.
  2. Eggplants are baked in the oven at a temperature of about + 180 ° C until soft for 30-40 minutes.
    Important! If you have enough space in the oven, beets can also be baked in their skins along with eggplants.
  3. Boiled or baked vegetables are peeled and chopped using a grater or meat grinder.
  4. Apples and peppers are cored with seeds, garlic is peeled.
  5. All ingredients are also ground using a meat grinder.
  6. Mix all the products in one pan, add salt and sugar, mix and leave in a warm place for about an hour.
  7. Then add vegetable oil, put the mixture on the fire and heat over low heat for about 20-30 minutes under the lid and another 5 minutes with the lid open.
