So, what products do you need to stock up on for caviar:

  • young zucchini, carrots, beets, onions, ripe tomatoes - 1 kilogram each;
  • garlic – 1 medium head;
  • vegetable oil – 250 ml;
  • salt. – 2 tbsp. l.;
  • a mixture of black and red ground pepper - just half a teaspoon;
  • vinegar essence - 1.5 tablespoons.

It will take about two hours to prepare unusual caviar from zucchini. But we assure you, it's worth it. The result will be a finger-licking appetizer.

How to cook

Before you start preparing squash caviar with beets, you need to prepare the vegetables.

Preparing vegetables

  1. Zucchini, beets and carrots are soaked separately in cold water to wash off any stuck soil. If necessary, repeat the procedure.
  2. After the vegetables have dried, peel them, and also the middle of the zucchini, if seeds have already formed. Remove the skins from the onion. We wash the vegetables again and place them on a clean napkin.
  3. For caviar you need tomatoes without skin. Scald them with boiling water, then plunge into ice water. They will clean without problems. After this, the tomatoes are ground into a separate cup.
  4. First cut the vegetables into pieces and then grind them in a meat grinder. You need to grind the zucchini separately to drain off the excess liquid. Garlic is crushed in a garlic press.

Cooking process

To cook caviar, you need to choose a container with a thick bottom. It is not advisable to use an enamel pan, because the appetizer will burn in it.

  1. Place the chopped vegetables (except tomatoes and garlic) in a saucepan, add salt, sugar, add oil and mix thoroughly to obtain a homogeneous mass. Place over medium heat and bring to a boil while stirring constantly.
  2. As soon as the caviar begins to boil, transfer to low heat and cook for about an hour. The pan must be covered with a lid.
  3. Add the crushed mixture of ground peppers and tomatoes, cook for another 40 minutes without a lid. If you add tomatoes right away, the cooking time of the beets will increase.
  4. After 10 minutes you need to add the garlic, boil for 5 minutes and pour in the essence. After 3 minutes the caviar is ready.
Attention! Before adding the essence, taste the dish. If there is not enough salt, add it.

A hot appetizer of zucchini and beets, prepared without frying vegetables, is placed in sterile jars and covered with screw or tin lids. Turning the cans upside down, he wraps them in a blanket.
