After the vegetables are ready, peel them and chop them. Without frying, this squash caviar turns out to be very satisfying and extremely healthy.

This will be squash caviar for the winter without frying using mayonnaise.
In addition, you need: zucchini 2 kg, carrots 1 kg, spices, tomato sauce 0.5 l, sugar 3 tbsp. spoons, vinegar, onion.
Cut the onion, main ingredient and carrot into medium cubes and pass through a meat grinder or blender.
After this, the vegetables need to be put in a pan, salt and pepper, add sugar and let the vegetables boil. After this, the fire should be reduced and left to simmer for about two hours.
Next, add tomato sauce, remaining spices and mayonnaise.
When the caviar is ready, it is placed in sterile jars and rolled up. The jars need to be stored upside down for the first time, and then they are placed in a cold place.

This zucchini pasta recipe is made without oil. We will need:
- zucchini - 1.5 kg;
- carrots 1 kg;
- tomatoes 1 kg;
- onion 0.5 kg;
- greenery;
- salt.
First you need to peel the zucchini, but if the vegetable is young, then you don’t have to do this. Cut the zucchini into cubes and place in a saucepan.
Next, add the finely grated carrots into the pan.
Now you need to treat the tomatoes with boiling water, chop them finely and add them to the rest of the vegetables. We also send finely chopped onions there.
Now all the ingredients need to simmer for about 40 minutes until they are completely cooked.
The zucchini appetizer is served ready-made, just as you got it in a saucepan, or you can grind it in a blender.
One serving of zucchini snack can be up to 250-300 grams, because it is very low in calories.

Zucchini paste can be prepared in a slow cooker. This recipe requires: 2 kg of zucchini, 750 gr. tomatoes, 400 gr. onion, 250 gr. carrots, tomato paste 2 tbsp. l, oil 2 tbsp. l, spices.
Preparation: Approximately 4.5 liters are placed in the multicooker. Vegetables shrink in volume during cooking, so they all fit into the container.
First, pour boiling water over the tomatoes so that you can remove the skins from them. Now you need to chop the onions and vegetables. Set the “baking” mode and fry the onion a little until it is transparent. Now you can add the carrots and simmer them a little.
Now add the diced zucchini. Don’t forget about the tomatoes, peel them and cut them into cubes, then add them to the rest of the vegetables.
Add tomato paste after the tomatoes and mix everything well.
Now we just have to wait until the zucchini paste is completely cooked. After this, you need to cool it and grind it with a blender. After this, it can be rolled up in a glass container.
If you are making a vegetable snack for children, then it is not necessary to add tomato paste to it. The multicooker snack turns out to be quite tender and very tasty, and most importantly, low in calories.
