It is difficult to find a housewife who, in her entire life, has not at least once cooked caviar from zucchini for the winter. This product can, of course, be bought in a store, but today this snack is not only expensive, most importantly, its taste is not at all what it used to be. There is nothing to be surprised here, because in the Soviet years all canneries used a single technology and GOST. Modern manufacturers more often use non-binding technical conditions (TS).

- Any vegetables used to prepare caviar with apples are thoroughly washed in several waters, peeled, cut into cubes or minced.
- Tomatoes should be chosen to be fleshy so that there is less juice. To remove the skin, just dip them first in boiling water, then in cold water. The peel will come off easily.

First option
To prepare vegetable caviar with apples for the winter you will need the following products:
- large zucchini - 3 pieces;
- ripe tomatoes – 3 kg;
- red sweet bell pepper – 0.7 kg;
- green sour apples – 0.5 kg;
- white onion for salad purposes – 0.4 kg;
- carrots – 0.7 kg;
- vegetable oil – 350 ml;
- allspice peas – 12 pieces;
- bay leaf - 4 pieces.
- vinegar essence - 2 tablespoons;
- granulated sugar – 200 g;
- salt to taste.
After washing, vegetables (except onions) and apples are peeled, seeds removed, cut into small pieces and passed through a meat grinder, installing a grid with small holes.
For stewing, use dishes with a thick bottom (it is not advisable to use an enamel pan).
Pour the whole mass into it and put it on low heat. There is no need to cover with a lid, otherwise you will have to cook for a long time.
While the vegetable caviar is stewing, chop the onion and fry until amber in vegetable oil.
It is added after 60 minutes.At the same time, add salt, granulated sugar, peppercorns, bay leaves and pour in vegetable oil. After 25 minutes you need to pour in the vinegar. After 5 minutes, squash caviar with apples can be put into jars for the winter.
Second option
For caviar according to this recipe you need to stock up on:
- zucchini – 1 kg;
- ripe tomatoes – 0.8 kg;
- onions – 0.350 kg;
- green apples – 0.450 kg;
- coriander seeds and black peppercorns – 10 g each;
- carnation buds - 12 pieces;
- raisins – 0.4 kg;
- ginger root – 30 g;
- white wine vinegar – 350 ml;
- vegetable oil – 150 ml;
- sugar – 0.4 kg;
- salt (to taste).
The method of preparing vegetables for cooking is almost identical to the first option. The only difference is that the vegetables are not ground in a meat grinder, and the onions are not overcooked. The ingredients are cut into cubes and immediately put to simmer.
Wine vinegar, salt and sugar are added immediately. Spices and chopped ginger are boiled in a gauze bag. After 45 minutes, add raisins. Continue cooking the zucchini caviar over low heat for another 45 minutes. After this, remove the bag of spices. Cool the caviar a little and beat it with a blender. All you have to do is boil it lightly for about five minutes.
That’s it, the cooking process is complete, you can put the finished zucchini caviar into sterile jars for the winter and put it away for storage.
Option with roasting vegetables
To make the caviar taste more like the Soviet-era store-bought version, the vegetables are fried. We invite you to try this recipe for a vegetable snack for the winter.
Ingredients:
- kilogram of zucchini;
- two medium green apples;
- one carrot;
- one onion;
- one large fleshy tomato;
- clove of garlic;
- salt, pepper, herbs to taste and preference.
After peeling and cutting the vegetables, fry the zucchini, onions and carrots, tomatoes separately until golden brown. Then place in a saucepan along with chopped apples and simmer for 30 minutes. After this, add all the other ingredients and simmer for another half hour.
If you like caviar in pieces, as in the photo, you don’t have to change anything. To obtain a homogeneous consistency, you can use a blender. But in this case, before putting the finished product into jars, it will have to be boiled for about five minutes.
