To fry the mushrooms according to all the rules, you need to process them in advance, clean them of debris, and cut off dark places. There is an opinion that fruits should not be boiled, as this causes them to lose their flavor, and some even prefer to eat them raw. However, only daredevils who collected the fruits with their own hands are capable of this.

Fried obabki are rightfully the most popular and delicious among mushroom dishes.

How and how long to cook obabka mushrooms before frying

Obabki can be boiled, dried, fried, pickled, frozen for the winter, salted, they still do not lose their beneficial properties. Mushrooms must be processed within several hours after collection, as the pulp quickly deteriorates and darkens.

First, cut off part of the stem, remove debris from the sticky cap, then wash thoroughly under cold running water. There is no need to soak them, you just need to fill them with water and wait until they boil. Afterwards, drain the water, add new water and boil the mushrooms again. Thus, all bacteria, toxic substances, insects, worms invisible to the eye will die. You need to cook the obabki for a whole hour, skimming off the foam.As soon as the mushroom mass settles to the bottom of the pan, we can assume that the fruiting bodies are cooked.

After such processing, mushrooms are prepared as an independent dish or served as a side dish for meat or stuffed into pies.

How long to fry the dogs

Before subjecting mushrooms to heat treatment, they need to be cleaned and washed. If there is no need to boil them, then peeled and cut into pieces you just need to pour boiling water over them, spread them on a paper towel and let them dry.

It is also not recommended to soak mushrooms, since they have a porous consistency that tends to absorb a lot of moisture. As a result, the finished dish will turn out watery and tasteless.

Meanwhile, many people prefer to pre-boil the mushrooms. This takes about 40 minutes. After pre-treatment, the obabki is poured with cold water, placed on high heat and brought to a boil. Then the flame is reduced, and the mushrooms are boiled for a long time, removing the foam in the process. Or, after boiling, drain the first water, pour fresh water over the mushrooms and cook for about 30 minutes.

Advice! For obabok preparing for frying, it is better to remove the top layer of skin on the cap, as it can be bitter.

Obabki fried with onions

This recipe makes a delicious appetizer for any meal. If the fruits are finely chopped or minced in a meat grinder, then in finished form they can be spread on bread and consumed on fasting days.

Ingredients:

  • obabki – 1 kg;
  • onions – 2 heads;
  • garlic – 2 cloves;
  • vegetable oil – 40 ml;
  • butter – 30 ml;
  • salt – 1 tsp;
  • ground black pepper – 1 tsp;
  • granulated sugar – 0.5 tsp.

Preparation:

  1. Prepare the mushrooms for frying and chop. Cut young specimens lengthwise into two parts.
  2. Heat a frying pan, pour in vegetable oil and a little butter.
  3. Throw in the crushed garlic cloves and wait until they release their aroma, brown, and then carefully remove from the pan.
  4. Peel and finely chop the onion in advance, place in a container and cook until golden brown.
  5. Add mushrooms to the onion, reduce heat to medium, fry for 10 minutes until all the water has boiled away.
  6. Reduce heat to low and fry for another 10 minutes.
  7. At the end, add salt and pepper.

Obabki fried in oil with onions are ready. They are served garnished with greens.

Fried obabka mushrooms with potatoes and onions

Potatoes go well with mushrooms, especially if you don’t boil the potatoes in advance.

Advice! To prevent the potatoes from overcooking, it is advisable to use two separate frying containers for this dish.

Ingredients:

  • obabka mushrooms – 700 kg;
  • potatoes – 1 kg;
  • onion – 300 g;
  • garlic – 3 cloves;
  • vegetable oil – 80 ml
  • spices - to taste.

Preparation:

  1. Peel the potatoes, rinse and pat each root vegetable dry in a paper towel. Cut into slices, like French fries.
  2. Process the mushrooms and cut into small pieces.
  3. Chop the onion into small cubes.
  4. Place two frying pans on the stove at the same time. Pour a third of the oil into one, and the remaining part into the other.
  5. Where there is less oil, put the onion and fry until transparent. Then add the mushrooms and fry everything together for 10 minutes.
  6. Wait for the oil to heat up in another frying pan and throw in the chopped potatoes. Fry for 15 minutes until it is covered with a golden crust.
  7. Add mushrooms and onions to the potatoes, squeeze out the garlic, close the lid and fry everything together for 5 minutes.

After 10 minutes, you can open the lid, put the contents on a beautiful plate and treat your guests. Obabki with potatoes can be decorated with cilantro and dill.

Obabki fried in oil with egg

For the dish you will need the following ingredients:

  • obabka mushrooms – 300 g;
  • butter – 30 g;
  • egg – 1 pc.;
  • milk – 1 tbsp. l.;
  • green onions – 1 bunch;
  • dill – 1 bunch;
  • salt - to taste;
  • black pepper - to taste.

Preparation:

  1. Process the mushrooms and cut into pieces.
  2. Separate the light part of the green onions and chop.
  3. Put butter in a frying pan, melt and fry the onion in it, add mushrooms and simmer for another 30 minutes.
  4. Beat the egg with milk, add black pepper and salt.
  5. Pour the egg-milk mixture into the mushrooms and fry for another 5 minutes.
  6. Wash and chop the dill and green part of the onion, garnish before serving.

This dish is good for breakfast. Eggs and milk make mushrooms softer and more tender.
