Cherry wine at home

Cherry wine is popular. Various drinks are made from it - dessert and table drinks, liqueur and vermouth. The original taste is obtained by blending with other fruits.

Properties and composition of cherries

For their cherry wine at home, they use yellow, red and dark cherry fruits. They have a high sugar content - above 10%, which is important for fermentation. The berries have an amazingly subtle aroma that remains in drinks. Cherry fruits are not acidic enough for the fermentation process, only 0.35%, so food acids are added to the wort or mixed with other fruits. Valuable raw materials are wild forest berries, because they contain tannic acid.After 8-9 months, the bitter taste turns into a spicy note, a real highlight. After 2 years, a special bouquet is felt.

Important! Cherry berries are used to make delicious dessert and liqueur drinks, strong and table drinks, although the latter are not always successful.

Basics of Making Homemade Wine

Amateurs adhere to the following rules when preparing cherry wine:

  • take ripened fruits;
  • the berries are not washed, they contain strains of wild yeast, dirty ones are wiped with a napkin;
  • the dishes in which you make your own cherry wine are scalded with boiling water and dried;
  • Wooden, enameled, glass, and stainless steel containers are suitable.
Warning! For those who don’t like the bitter almond smell, the seeds are removed from the raw material using a special device or a safety pin.

It is better to do the procedure over a bowl to preserve the juice.

Preparation of wine from cherries takes place in several stages:

  1. Sourdough is made from crushed fruits, sugar and water, wine yeast, placed in a dark place for 2-3 days for vigorous fermentation. More often they take the entire volume of fruit at once.
  2. The starter is filtered and left to ferment quietly for 25-60 days.
  3. A water seal or rubber glove with a hole made by a needle is placed on the bottle.
  4. Clarification of the liquid is a signal about the end of the process.
  5. After the time specified in the recipes, add sugar or syrup.
  6. According to a simple recipe for cherry wine at home, the drink is poured from one container to another 4-6 times, freeing it from sediment.
  7. Then bottled.

A simple cherry wine recipe

For this option, you can use 1 g of tannin per 1 liter of wort.

  • 3.5 kg of berries;
  • 0.7 l of water;
  • 0.4 kg sugar;
  • 1 lemon.

For every kilogram of crushed fruit, add 0.25 liters of water and lemon juice. During fermentation, remove the foam with a wooden spoon.Then the wort is filtered, 0.1 kg of sugar is added to 1 liter of liquid. The container is kept at 22-24O C. After fermentation is complete, the liquid becomes lighter in color. Plain cherry wine is regularly filtered to remove sediment for 50-60 days. Then add sugar or alcohol to taste. Bottled and stored for 10-15 months.

Cherry wine with pits

For a 10 liter container take 6 kg of fruit or a little more. They are laid in layers to the very top, alternating with sugar to taste. Tie it with gauze or use a lid with holes. The bottle is placed in a bowl where the juice is spilled. After 3 days, pulp collects at the top, sediment at the bottom, and young cherry wine with seeds, made at home, in the middle. It is drained through a tube and allowed to stand, systematically removing sediment.

Cherry wine without seeds

When making this cherry wine recipe, granulated sugar is divided into 3 parts and added gradually.

  • 10 kg of berries;
  • 1 kg sugar;
  • 500 ml water;
  • 1 tbsp. spoon of citric acid.

The bones are removed.

  1. Place the raw materials in a bottle, pour out the water, and cover with gauze. The foam is collected.
  2. Strain the wort, mix with half the granulated sugar and acid.
  3. Twice after three days, pour 200 ml of pitted cherry wine, dissolving the remaining sugar, and combine the mixtures again.
  4. On day 50-60, the drink is tasted for sweetness.

Homemade cherry juice wine

For 5 liters of juice you need 7 kg of raw materials.

  • 2.1 kg sugar;
  • 30 g tartaric acid;
  • 15 g tannic acid;
  • packaging of wine yeast.

It is better to make this wine from cherries, leaving a handful of seeds for flavor. The seedless berries are left to ferment in a bowl for 24-36 hours.

Pass the berry mass through a juicer, add two-thirds of granulated sugar, seeds, acid and the amount of wine yeast as recommended on the package to the juice, and leave to ferment.

Homemade dessert wine made from yellow cherries

The sugar content and delicate aroma of the raw materials will give the drink a fragrant bouquet:

  • 5 kg of fruits;
  • 3 kg sugar;
  • 1.9 liters of water;
  • packaging of wine yeast.

A light alcoholic drink is prepared from these ingredients.

  1. For this homemade wine recipe, pit the cherries.
  2. The berries are passed through a meat grinder.
  3. Boil syrup and combine with crushed fruits.
  4. Add wine yeast and pour it into a large bottle to ferment.

Cherry compote wine

The drink is prepared from fresh, fermented and slightly spoiled sweet compote. Do not use a product that smells like vinegar.

  • 3 liters of compote;
  • 400 g sugar.

The contents of the jars with compote are filtered, the fruit is squeezed out.

  1. The liquid is heated so that the sugar easily dissolves.
  2. Pour into a bottle, adding a handful of unwashed light raisins or rice (they contain wild yeast).
  3. They are left to ferment.

Cherries in combination with other berries

Sourish fruits will enhance the fermentation process, and therefore they are readily added.

Cherry wine

It is easy to make wine from cherries and sweet cherries, since both berries complement each other in acidity and sugar content.

  • 5 kg of fruit;
  • 2 kg sugar;
  • 2 liters of water;
  • pack of citric acid.

The berries are seeded and filled with water for 24 hours to make it easier to squeeze out the juice. Add granulated sugar and acid and leave to ferment. Then it is filtered and put on quiet fermentation.

Cherry and white currant wine

Currants will give the drink a slight hint of acidity.

  • 5 kg of light cherry fruits;
  • 1.5 kg of white currants;
  • 3 kg granulated sugar;
  • 1.5 liters of water;
  • 2 g wine yeast.

The seeds are removed and the fruits are passed through a blender. Granulated sugar is diluted in warm water and yeast is added. The syrup is combined with the berry mass and left to ferment.

Advice! When preparing the wort, make sure that the air temperature is 22-24o C.

Cherry and blackcurrant wine recipe

Adding currants will make it possible not to use citric acid.

  • 1 kg of cherry fruits;
  • 2 kg black currants;
  • 0.5 kg granulated sugar;
  • 2 liters of water;
  • 10 g alcohol yeast.

The seeds from the berries for this cherry wine are removed at home, and the fruits are crushed in a blender.

  1. Syrup is prepared from water and granulated sugar.
  2. The mass is mixed with syrup, yeast and then the drink is prepared according to the generally accepted algorithm.
  3. Quiet fermentation with periodic removal of sediment lasts 80-90 days.
  4. Then you need to let the wine from cherries and currants ripen for another 50-60 days.

Strawberry plus cherry

For a dessert delicacy take:

  • 2 kg of berries and granulated sugar;
  • 4 g vanillin;
  • 3 tablespoons lemon zest.

The seeds are removed and the fruits are crushed. The berry mass is mixed with all the ingredients for fermentation.

Homemade cherry and raspberry wine

The drink will be aromatic.

  • 1.5 kg raspberries;
  • 1 kg of cherry fruits and granulated sugar;
  • 2 liters of water.

The berries are crushed, freed from seeds, mixed with some sugar and placed in a bottle. Boil the syrup and cool. Pour the berry mixture cold.

How to make wine from cherries and rowan berries

Red or chokeberry are added to cherry fruits. Ordinary rowan will give the wine a pleasant tartness.

You will need:

  • 1 kg of berries and sugar;
  • 2 liters of water;
  • 100 g dark raisins.
    ​Attention! Vodka or alcohol is sometimes added to the blend after fermentation, up to 50 ml per 1 liter.
  1. Rowan is scalded with boiling water and left for half an hour.
  2. The pits are extracted from cherry fruits.
  3. The berries are crushed and raisins are added.
  4. The cooled syrup is poured into the mixture.

Other drinks made from cherry berries

The intoxicating delicacy is varied with spices.

Homemade cherry liqueur

They take light fruits.

  • 2.5 kg of berries;
  • 1 kg granulated sugar;
  • 1 liter of vodka;
  • half chopped nutmeg;
  • 1 vanilla pod;
  • 6-7 sheets cherry tree.

Liquor is being prepared.

  1. Grind the seedless berries by hand and set aside for 40-50 hours.
  2. Squeeze the juice through a sieve and mix all the ingredients except vodka.

  • 5 liters of cherry drink with a strength of up to 16 degrees;
  • 1.5 kg of honey;
  • a bouquet of herbs, 3-5 g each: wormwood, mint, thyme, yarrow, lemon balm, chamomile and a mixture of cinnamon, cardamom, nutmeg;
  • 0.5 l of vodka.
  1. The herbs are dried and infused in vodka for up to 20 days.
  2. The strained liquid is mixed with honey and wine.
  3. Leave for up to 2 months.

Homemade champagne made from cherries and gooseberries

Recipe for a wonderful sparkling drink:

  • 1 kg gooseberries;
  • 3 kg of cherry fruits;
  • 500 g raisins;
  • 5 kg granulated sugar.
  1. The berries are crushed for fermentation.
  2. The cleared liquid is poured into sparkling bottles, into which 20 g of granulated sugar are placed.
  3. The bottles are corked, the corks are secured with wire, and placed horizontally in the basement for a year.

Anyone can make cherry wine if you follow the recommendations:

  • berries are selected without the slightest sign of spoilage;
  • to make successful wine from cherries, add tannic and tartaric acid;
  • if the fruits are crushed, it is better to remove the seeds, otherwise they will give a bright almond bitterness;
  • citric acid extends the shelf life of the drink;
  • sugar neutralizes excess acid;
  • vanilla, nutmeg, cloves, and other favorite spices are added to the delicacy to enrich its bouquet;
  • Recipes for cherry wine for the winter include blends with different fruits, which refine its taste.

Terms and conditions for storing homemade cherry wine

Drinks with an alcohol content of 10-16% are stored for up to 2-3 years. They are placed horizontally in the basement. Those made according to the recipe for wine from cherries with pits need to be drunk within 12-13 months. Otherwise, poisoning with hydrocyanic acid from berry kernels is possible.
