Feijoa pureed with sugar

Motherland feijoa - the south of the African continent. For us, this berry, reminiscent of strawberries and kiwi in aroma and taste, is exotic. Tropical fruits are valued for their high content of iodine, vitamin C, sucrose, pectin, fiber and various organic acids.

In Russia, berries appear on sale in the fall. Feijoa can be eaten fresh or prepared for the winter to provide your family with vitamins and save them from diseases. We will try not only to tell you how feijoa, pureed with sugar, is prepared, but also to present pictures and videos to our readers.

How to select and prepare feijoa

Before you start cooking feijoa with sugar without heat treatment, there are a few things you should know.

Firstly, the berries themselves are insidious. If you make mistakes, then harvesting their feijoa it can ferment, but this does not improve the mood in any way. Therefore, pay due attention to the purity and quantity of granulated sugar.

Secondly, it is not so easy to find berries of the right quality. After all, we have already noted that fruits grow in the subtropics. In Russia, feijoa is grown in Sochi and in the vast expanses of Abkhazia. It is clear that such exotic products are not sold in all regions of Russia.

So, you saw feijoas in the store and decided to buy them for grinding with sugar to make a vitamin preparation for the winter. How not to make a mistake with your choice:

  1. Try to pay attention to small fruits, since large ones are less aromatic and tasty.
  2. The peel of a high-quality feijoa should be green on all sides; spots and dents are unacceptable.

Before grinding, the berries are sorted, only whole ones are left, without blackness or damage, and washed thoroughly, changing the water several times. After pruning, the remaining fruits can be used to make compote or jam, as they are subject to heat treatment.

Feijoa grinding techniques

To grind feijoa with sugar, you must first obtain a puree. Let's find out what tools you can use to do this:

  1. A regular grater is used when there is only a small amount of feijoa. Grind the fruits on the side with large cells. It is clear that it is inconvenient to chop a large number of berries in this way. In addition, you may injure your fingers.
  2. In a meat grinder, the transformation of berries into puree occurs faster, and the mass is homogeneous. But there are some difficulties here. An electric meat grinder is not used for such purposes, since the hard skin of the feijoa clogs the meat grinder, and the knife does not cope with its task and loses its sharpness. The pulp and juice fill the inside of the meat grinder and have to be removed manually. If you don’t have a regular meat grinder, then you need to use a mesh with large holes and throw in the berries a little at a time.

    The mass is heterogeneous, the pieces are of different sizes.
  3. It is best to grind feijoa in a blender. The berries cut into pieces are crushed together with sugar. With this preparation of the fruit, a homogeneous consistency is obtained. In addition, the mass is airy and tender.

Decide for yourself which method of grinding feijoa to use, but we recommend using a blender to prepare feijoa ground with sugar.

Culinary options

Most often, feijoa is prepared without any additives. And this is not surprising, because their taste and aroma are reminiscent of strawberries and pineapple. With horseradish root and pear

Exotic fruit pureed with sugar is not only suitable for tea. You might be surprised, but you can also eat meat with feijoa. Moreover, your guests will not be able to immediately guess what kind of sweet and sour sauce was prepared.

Our version uses pears as an additional ingredient. But you can also add cranberries, lingonberries, and cloudberries. It turns out amazingly delicious!

Sauce ingredients:

  • 0.6 kg of tropical fruits;
  • one pear;
  • 100 grams of granulated sugar;
  • 1 or 2 tablespoons horseradish root.

The cooking process is exactly the same as in previous recipes. All ingredients are ground in a meat grinder or ground in a blender and mixed with sugar. That's all.

Important Note

As you have seen, according to the recipe, the sugar content in pureed feijoa is minimal. And this is already some danger for storage. Therefore, it is necessary to look into the refrigerator and check whether fermentation is starting.

To prevent the top layer of raw jam from oxidizing, before closing the jars, pour a thick layer of sugar on top, thereby creating a plug that does not allow oxygen to pass through.

Storage Features

You learned how to rub exotic fruits with granulated sugar.And now about how to properly preserve the workpiece. Although, to be honest, the pureed berries are eaten instantly. For storage use a refrigerator or cellar. It will disappear in the warmth and will quickly ferment.

Many people are probably interested in how long raw jam can be stored. If you observe the temperature regime - +5-+8 degrees, then for three months.

Comment! Freezing feijoa jam is not recommended.

Sometimes the jam turns from green to brown. You should not be afraid of such changes. The fact is that the fruits contain a high content of iron and iodine; when they come into contact with air, they oxidize. This does not change the nutritional quality. Just when transferring the workpiece into jars, fill them as completely as possible. Then darkening can be avoided.

By complying with all the requirements, you can treat your family with delicious, aromatic jam - feijoa, mashed with sugar.
