How to make jam from red viburnum berries

Viburnum gives dishes a unique aroma and a very distinctive taste. Such properties of the berry are especially appreciated by jam lovers. Jam can be prepared either from pure viburnum or from a mixture of this berry with other fruits or fruits - there are many recipes.

Viburnum jam with sugar

To prepare this winter preparation you will need:

  • 1 kg viburnum;
  • 1.3 kg granulated sugar;
  • 250 ml water.

To make jam, you need to follow these steps:

  1. Wash the viburnum and dry the berries.
  2. Blanch the fruit in boiling water for a few minutes.
  3. Dissolve sugar in warm water to obtain syrup.
  4. Pour sugar syrup over the berries and stir.
  5. Leave the candied viburnum for 10-12 hours at room temperature.
  6. Now you need to bring the jam to a boil, periodically removing the foam from it. After this, pour the hot preparation into sterile jars.

Viburnum with oranges

Jam with the addition of orange citrus fruits acquires a rich, very bright shade. This preparation will become a real decoration for the winter table, in addition, it will be very healthy and fragrant.

To prepare viburnum jam with oranges, you need to take:

  • 1.5 kg of red viburnum berries;
  • 2-3 large oranges;
  • 2 kg granulated sugar.

The entire cooking process consists of several steps:

  2. Viburnum is ground with a blender or meat grinder.
  3. Sugar is added to the resulting puree, everything is thoroughly mixed - after a while the sugar should completely dissolve.

Jam with viburnum and apple

As mentioned above, not everyone can eat red viburnum in its pure form, but there are excellent recipes where this berry acts as a flavorful additive.

For viburnum-apple jam you will need the following ingredients:

  • 2 kg of berries;
  • 5 kg of any apples (it is better to take sweet or sweet and sour fruits);
  • 5 kg granulated sugar.

Prepare jam Just:

  1. Remove the washed viburnum from the branches and place in a wide bowl or pan.
  2. Use your hands or a wooden pestle to crush the berries until they become a smooth puree.

Viburnum jam with vanilla and lemon

Such jam has no chance of going unnoticed, because it has an unusual taste and a very bright aroma.To prepare this delicacy, in addition to granulated sugar, water and viburnum, you need to take only one lemon and a bag of vanilla sugar.

Making viburnum jam is very simple:

  1. The berries are sorted and washed in saline solution. The solution is prepared from a liter of water and a tablespoon of regular table salt.
  2. Now you need to prepare sugar syrup: dissolve sugar in water and bring the mixture to a boil.
  3. Place whole viburnum berries into boiling syrup, turn off the stove and leave the jam to cool for 5-6 hours.
  4. You need to remove the zest from the lemon and squeeze out the juice.
  5. The berries are removed from the sugar syrup and lemon zest is added. This composition must be brought to a boil, then strain through a sieve.
  6. The syrup is boiled again with viburnum for eight minutes. After which it is cooled for at least four hours.
  7. The last stage: the jam is brought to a boil and, with constant stirring, is cooked until fully cooked.
  8. All that remains is to add lemon juice, add vanillin, mix everything and pour into sterile jars.

Unusual jam with pumpkin

This preparation for the winter will definitely appeal to lovers of culinary experiments, because it combines pumpkin and red berries of aromatic viburnum. For this extraordinary jam you will need:

  • 1 kg viburnum;
  • 1 kg pumpkin;
  • 1.5 kg sugar;
  • 1 liter of water.

Prepare the dish like this:

  1. Wash whole bunches and clear them of debris and leaves.
  2. The pumpkin is cleaned and cut into small cubes, which are simply lightly boiled with the addition of water.
  3. Pumpkin and viburnum along with twigs are ground in a blender or chopped using a meat grinder.
  4. Pour sugar into the resulting puree and wait several hours until it completely dissolves.
  5. All that remains is to cook the jam, stirring it and skimming off the foam. Usually 40 minutes on low heat is enough.

Viburnum syrup

It is very good to add bright viburnum syrup to ice cream, jelly or cakes. It's easy to prepare; you just need water, berries and sugar. It is advisable to blanch the berries, then chop and mix with sugar.

Cook the mixture over low heat until the sugar is completely dissolved, after which you can add a little lemon juice and seal the syrup into bottles.

Viburnum pastila

Children love this delicacy, and if we prepare pastila with viburnum, it becomes not only tasty, but also incredibly healthy. For marshmallows you need washed berries, sugar and lemon juice or citric acid.

It is better to use a juicer to obtain juice. The berries are passed through it, the juice is poured into a bowl with a thick or double bottom and boiled until the consistency of berry puree is obtained.
