  • orange peel – 500 g;
  • granulated sugar – 600 g;
  • fresh lemon juice – 4 tbsp. l.;
  • allspice peas – 3 pcs.;
  • vanilla pods – 1 pc.;
  • star anise – 1 pc.;
  • water – 3.4 l.

Sequencing:

  1. Trim the zest, leaving a small part of the pulp (1 cm).
  2. Bring water (3 l) to a boil. Add the peel and cook for 3 minutes over low heat.
  3. Drain the zest in a colander and rinse under cold water for a few seconds.
  4. Place the peel back into boiling water. Cook for 3 minutes and repeat the same steps.
  5. Then prepare a syrup based on 400 ml of water, sugar and spices. The vanilla pod should first be opened and placed in the liquid without removing the seeds.
  6. Boil the syrup for 5 minutes, then add the crust fragments and simmer over very low heat for 1 hour.

  2. Cut into strips 7 cm long and 1 cm wide (no more).
  3. Pour in 0.5 liters of water. Boil for 10 minutes.
