  5. Pour boiling water over the stacked tomatoes, cover with sterile tin lids and let them stand in this form for 5-10 minutes.

How to pickle tomatoes for the winter with herbs and garlic

This recipe can be classified as a classic, because while other spices may, for various reasons, not be used when pickling tomatoes for the winter, then the addition of garlic and various herbs will be appreciated by any housewife. And such popular herbs as parsley, dill or cilantro grow in almost every garden and can be easily found at any market.

So, to get a delicious snack for the winter you will need:

  • 1.2 kg of ripe tomatoes (it is better to take cherry tomatoes);
  • head of garlic;
  • 1 teaspoon mustard seeds;
  • 5 peas of allspice;
  • a small bunch of herbs (cilantro, dill, parsley);
  • 100-120 g sugar;
  • 1000 ml water.
  • 1 teaspoon of vinegar essence 70%;
  • 60 g salt.

  • 1 pod of hot pepper;
  • 1 glass of vinegar 9%;
  • 10 bay leaves;
  • 10 peas of allspice;
  • 4 liters of water;
  • 200 g sugar;
  • 120 g salt.

Making pickled tomatoes for the winter according to the finger-licking recipe will take about two hours.

  1. Tomatoes and herbs are washed under cold water and dried on a towel.

The technology for making tomatoes for the winter according to this recipe is absolutely similar to that described above, but the composition of the ingredients is somewhat different:

  • 2 kg of tomatoes;
  • 5 cloves of garlic;
  • 1 sprig of parsley and dill;
  • 1500 ml water;
  • 150 g sugar;
  • 60 g salt;
  • 1 tbsp. a spoonful of vegetable oil and vinegar 9%;
  • black pepper and bay leaf optional and to taste.

Thanks to the small relative content of vinegar and an increased dose of sugar, the snack turns out to be very tender, natural and, of course, tasty.

Marinated tomatoes without vinegar

But pickled tomatoes can be prepared for the winter in jars according to a very simple recipe, without using either vinegar or various seasonings. And the tomatoes still turn out surprisingly tasty. And the brine itself is very tender.

For marinating according to this recipe, it is better to use liter jars. For one jar you will need:

  • 500-600 g tomatoes;
  • 500 ml water;
  • 30 g salt;
  • 50 g sugar;
  • citric acid on the tip of a teaspoon.

And the cooking process is not at all complicated.

  1. The tomatoes are washed in water and pricked at the base with a fork.
  2. Place quite tightly in pre-sterilized jars.
  3. Each jar is carefully poured with boiling water so that the water practically pours out.
  4. Cover the jars with sterile lids.
  5. After heating for 10-15 minutes, the water is drained and heated again to a boil with the addition of salt and sugar.
  6. The tomatoes are again poured with the prepared brine, citric acid is added to each jar on top and the jars are immediately tightened.
    Important! The lids, after they have been used to cover the jars, should be sterilized again for 5 minutes by placing them again in boiling water.
  7. After twisting the jar, you need to turn it on its side, roll it a little to dissolve the acid and, turning it upside down, place it under a warm blanket for additional sterilization until it cools completely.

Recipe for pickled tomatoes for the winter in jars without sterilization

Various berries and fruits, such as apples, can serve as a complete replacement for acetic acid.

In this recipe for the winter, they will play the role of the main preservative component and, as in the previous case, it will be possible to do even without sterilization.

You will need:

  • from 1.5 to 2 kg of tomatoes;
  • 4 pieces of sour juicy Antonovka apples;
  • 1 sweet pepper;
  • several sprigs of parsley and dill;
  • peppercorns and bay leaf to taste;
  • 1.5 liters of water;
  • 60 g each of sugar and salt.

The procedure for making pickled tomatoes according to this recipe is absolutely similar to that described in the previous recipe. All vegetables, fruits and herbs are first poured with boiling water, then it is drained, and a marinade is prepared on its basis, which is again poured into the jars with the contents.

Advice! Using the same recipe without vinegar, you can deliciously marinate tomatoes with any sour fruit or berry: cherry plum, red currants, gooseberries, cranberries and even kiwi.

Delicious pickled tomatoes for the winter with spices

The spices that are traditionally used for pickling tomatoes for the winter have already been listed above. But here I would like to describe a very non-standard recipe that will allow you to prepare very tasty tomatoes with an original aroma. Moreover, all spices will be replaced with only one additional ingredient - marigold flowers and leaves. Many people know and love this flower, but few realize that it can replace the valuable and rare spice - saffron.

For a liter jar you will need:

  • 500 g tomatoes;
  • several flowers and young leaves of marigolds;
  • 500 ml water;
  • 50 g sugar;
  • 30 g salt;
  • ½ teaspoon of vinegar essence 70%.

And preparing a delicious and original snack for the winter is very simple:

  1. Tomatoes, flowers and marigold leaves are washed thoroughly in cold water and lightly dried.
  2. Place 2-3 flowers with marigold leaves at the bottom of sterile jars.

  4. On top they are covered with another 2-3 marigold flowers with leaves.

How to make pickled tomatoes with horseradish

Using the same method, delicious pickled tomatoes are prepared for the winter with the addition of not only leaves, but also horseradish roots.

Typically, for 2 kg of tomatoes you need to put 1 leaf of horseradish and one small rhizome, cut into pieces.

Marinated tomatoes with vodka

When adding a small amount of vodka when marinating tomatoes, this does not at all affect the alcohol content in the marinade, nor the taste or aroma of the finished tomatoes. But the fruits become stronger, even slightly crunchy, and the shelf life of the product increases, reducing the possibility of mold or, moreover, swelling of cans of tomatoes.

To a three-liter jar, along with 1 tablespoon of 9% vinegar, add the same amount of vodka immediately before swirling.

Comment! Vodka can be replaced with diluted alcohol or even moonshine, but without the fusel smell.

Rules for storing pickled tomatoes

Tomatoes pickled according to the recipes described above can be stored either in cool cellar conditions or in a pantry at room temperature. You just need to place them away from heating devices and light sources.

The usual shelf life for such twists is 12 months. The only exception is tomatoes marinated with vodka.They can be stored for up to 4 years in an ordinary room.
