  5. Grind tomatoes in any convenient way, using a meat grinder or blender.
  6. Very little oil is usually added to this preparation, so Uncle Bens can be considered a dietary dish. It is quite suitable for those who want to lose weight.
  7. The original Uncle Ben's recipe includes cornstarch to thicken the sauce. In home canning, it can also be used or replaced with potato. The amount depends on the thickness of the sauce: up to 5 tbsp. spoons
  8. Usually this workpiece is not additionally sterilized. Simply pour the boiling sauce into sterile containers. Be sure to wrap the canned food before it cools.

Classic Uncle Bens recipe

The classic sauce recipe does not include too many ingredients, but that doesn’t make it any worse. The rich vegetable sweet and sour taste will delight any gourmet.

Required:

  • tomatoes - 2 kg;
  • bell pepper - 700 g;
  • carrots - 400 g;
  • vegetable oil - glass;
  • garlic - 6 cloves;
  • sugar - 140 g;
  • salt - 40 g;
  • vinegar (9%) - 25 ml.

According to taste and desire, you can add any chopped herbs, hot or ground red pepper.

Preparation:

  1. Tomatoes are peeled and chopped in a blender.
    Advice! You can use a meat grinder.
  2. Boil the tomatoes for a quarter of an hour under the lid.
  3. Add chopped vegetables, except garlic, and simmer for another 20 minutes.
  4. Now it’s the turn of spices, oil and garlic cloves that need to be chopped. At the same time, add chopped herbs and finely chopped hot pepper to the sauce.
  5. Another 5 minutes of boiling, and the sauce is ready to be packaged in sterile jars. Hermetic sealing is the main condition for the preservation of canned food.

Uncle Bens for the winter with tomatoes

This preparation most closely resembles a sauce and, in its consistency, is exactly what it is.

You will need:

  • 5 kg of tomatoes;
  • a pair of large onions;
  • 6-8 garlic cloves;
  • 2 cups sugar;
  • 90 g salt;
  • 5 teaspoons of powdered mustard;
  • 20 ml vinegar 9%.

For spices you need 4 teaspoons of ground black pepper and 8 bay leaves.

Advice! If you don’t like spicy dishes, you can add less pepper and mustard.

How to cook:

  1. Prepared tomatoes are crushed in any convenient way.
  2. Spices are added to the tomato mass and boiled for a quarter of an hour.
  3. Onions and garlic are turned into a paste and added along with sugar, salt and mustard to the sauce.
  4. After boiling for 5 minutes, pack into sterile containers and roll up.
  5. The workpiece needs to be heated for 24 hours under a blanket.

Uncle Bens of peppers and tomatoes

Another ketchup recipe enriched with bell peppers and herbs.

Ingredients:

  • tomatoes - 5 kg;
  • onion - 300 g;
  • sweet pepper – 400 g;
  • salt - 50 g;
  • sugar - 1.5 cups;
  • vinegar - 0.5 cups (9%);
  • ground black pepper - 1 teaspoon;
  • hot red pepper - 0.5 teaspoon;
  • greens - to taste.
Advice! Basil, celery, and parsley go best with tomatoes.

For spices, a pinch of cinnamon and a few bay leaves are recommended.

Preparation:

  1. It is not necessary to chop the tomatoes for this sauce; just cut them into cubes. Onions and bell peppers are cut even larger into 4 pieces.
  2. All this is cooked in a saucepan without a lid over very low heat, 2 times for an hour and a half, with an interval of a couple of hours between cooking.
  3. After cooling, the vegetable mixture is rubbed through a sieve and put back to boil, adding all the herbs and spices.

    Important! The greens are not cut, but tied into a bunch and placed in a pan. When the sauce is ready, take it out.
  4. Final cooking time is another 3 hours. The volume of ketchup should be reduced by half during the process.
  5. The boiling sauce is packaged in sterilized containers and immediately rolled up. It does not need additional heating.

Uncle Bens without tomatoes

When preparing the Uncle Bens snack, tomatoes in any recipe can be replaced with tomato paste. The proportions here are as follows: 1 kg of tomatoes corresponds to 300 g of tomato paste.

Warning! It should contain only tomatoes.

To get the fill, you need to mix it with water. If diluted 3 times, we get an equivalent replacement for tomato juice from a kilogram of tomatoes. If you want a thicker sauce, you can use less water, but the taste will become richer.

Ingredients:

  • tomato paste - 900 g;
  • carrots, onions - 0.5 kg each;
  • bell pepper - 10 pcs.;
  • 12 cloves of garlic;
  • a bunch of parsley;
  • a glass of vegetable oil and sugar;
  • salt - 50 g;
  • apple cider vinegar - 75 ml.

How to cook:

  1. Dilute the tomato paste and let it boil.
  2. Vegetables are cut into strips and added to the tomatoes. Simmer everything together for another 20 minutes.
  3. Add all seasonings, except vinegar, herbs and garlic, they are pre-chopped.
  4. After heating for 5 minutes over low heat, season the sauce with vinegar and package it in sterile containers. Be sure to wrap it up until it cools down.

Uncle Bens salad with carrots and garlic

This salad is prepared quickly and turns out delicious.

You will need:

  • tomatoes - 3 kg;
  • 2 kg of sweet pepper;
  • 1 kg of carrots, onions;
  • 24 garlic cloves;
  • 1 glass each of vegetable oil and sugar;
  • salt - 1.5 tbsp. spoons;
  • 0.5 cups vinegar (9%).

How to cook:

  1. Grind the tomatoes using a meat grinder, add all the seasonings except vinegar, and evaporate for 15 minutes.
  2. Vegetables cut into strips, except garlic, are placed in the sauce and cooked for another 1/3 hour. Chopped garlic cloves are placed in the preparation after a quarter of an hour.
  3. After adding vinegar, the products are packaged in sterile containers, rolled up, and covered with a blanket.

Lecho Uncle Bens from pepper

It contains bell pepper. A large amount of sugar makes it sweet, unlike traditional Bulgarian lecho.

Ingredients:

  • 6 kg of tomatoes;
  • 5-6 kg of bell pepper;
  • carrots and onions - 10 pcs.;
  • sunflower oil and sugar - 2 cups each;
  • vinegar (9%) - 1 cup.

How to cook:

  1. Grind the tomatoes using a meat grinder.
    Advice! You can additionally rub them through a sieve to remove the seeds.
  2. Boil the tomato mass, adding oil and spices, for about a quarter of an hour.
  3. Onions, sweet red peppers, and grated carrots cut into half rings are added to the lecho and boiled for another quarter of an hour. Taste for salt, season with vinegar and package in sterile containers and roll up.

Uncle Ben's sauce with cinnamon and cloves

These spices give the sauce an indescribable taste and aroma.

You will need:

  • 2.5 kg of tomatoes;
  • two onions;
  • 0.5 cups sugar;
  • 0.5 tbsp. spoons of salt;
  • 1/2 teaspoon each of cinnamon, black pepper;
  • 1/4 teaspoon ground celery seeds;
  • 2 buds of cloves.

Vinegar is added to this preparation to taste.

How to cook:

  1. Boil chopped tomatoes for 15 minutes. To separate them from the seeds and skin, rub them through a sieve.
  2. Grind the onion in a blender and boil with tomato puree until the thickness is desired.
  3. Add spices and spices and cook for another quarter of an hour.

  • hot pepper pod;
  • a glass of already boiled beans;
  • 100 g sugar;
  • 30 g salt;
  • 120 ml vegetable oil.

  • canned pineapples - 1.7 l;
  • 3 pods of hot pepper;
  • 0.25 liters of tomato paste;
  • one and a half glasses of sugar;
  • 5 large onions;
  • 75 g salt;
  • 3 tbsp. spoons of starch, preferably corn starch.

How to cook:

  1. Remove the skin from the tomatoes, cut into small pieces, and grind half of them in a blender to form juice.

    Advice! It is also better to remove seeds from tomatoes.
  2. Dilute tomato paste in a ratio of 1:2, adding salt, sugar, chopped tomatoes.
  3. Finely chopped onion is sprinkled with vinegar, placed in the tomato mass, and simmered over low heat for 10 minutes.
  4. Add finely chopped sweet pepper and cook for another 1/3 hour.
  5. Peeled hot peppers are cut in half and soaked in water for an hour, changing the water once during this time.
  6. The remaining tomatoes are cut into pieces and placed in the sauce, and cooked for another quarter of an hour.
  7. Pineapples are cut into cubes, hot peppers are finely chopped and everything is added to the sauce.
    Attention! Pineapple juice is not poured out.
  8. After 10 minutes, add starch diluted with pineapple juice and let it boil.
  9. Packaged in sterile containers, rolled up, warmed under a blanket.

Recipe for Ankle Bens salad for the winter with soy sauce and celery

Even though this recipe contains exotic ingredients, it tastes closest to the manufacturer's original Uncle Ben's sauce.

Ingredients:

  • 400 g tomato ketchup without additives;
  • a can of canned pineapple rings;
  • one large onion and one medium carrot;
  • one and a half sweet peppers;
  • two stalks of celery;
  • half a pod of hot pepper;
  • a couple of cloves of garlic;
  • 150 g sugar;
  • 125 ml wine vinegar;
  • juice squeezed from half a lemon;
  • 2-3 tablespoons of soy sauce;
  • 2 tablespoons cornstarch;
  • vegetable oil for frying, preferably olive oil.
Advice! If desired, the amount of hot pepper can be increased and soy sauce can be replaced with salt to taste.

Preparation:

  1. All vegetables, except garlic and pepper, are cut into cubes. Capsicum peppers are cleared of seeds and finely chopped in the same way as garlic.

    Warning! Pineapple juice is not poured out.
  2. Starch is poured with cold water in the amount of 0.5 cups and allowed to stand.
  3. For cooking you will need thick-walled dishes. In a small amount of oil, fry all the vegetables and pineapples one by one. The fire must be strong, they must be stirred.
  4. In a deep bowl, fry pieces of hot pepper and garlic with added oil for about 5-7 minutes.
  5. After reducing the heat, add everything except the vegetables to the pan.
  6. When it boils, add vegetables and pineapples.
  7. Let it simmer for 5 minutes, pour in starch in a thin stream, mix well and let it thicken.
  8. Place in a sterile container and place in a water bath for 20 minutes (liter jars). Roll up and warm up under a blanket.

Recipe for Uncle Bens with tomato paste and basil

This aromatic herb goes well with tomatoes, and with the addition of hot pepper, the sauce will become hot and spicy.

The best place to store any canned food is a cool basement. If it is not available, a storage room or other room without access to light will do. According to housewives, even in such conditions, Uncle Bens sauce will last until spring if it is not eaten earlier.
