Today, no one is surprised by the variety of varieties of certain vegetables. Carrots are orange purple, red, white and, of course, yellow. Let's talk about the latter in more detail, about what it is famous for and how it differs from root vegetables of other colors.

brief information

Yellow carrots were not specifically bred as a variety or type; they are found in the wild and have been known for a very long time. The color of the root crop is affected by the presence and concentration of coloring pigment in it. For carrots it is:

  • carotene;
  • xanthophyll (this is what is found in yellow carrots);
  • anthocyanin.

The birthplace of this culture is Central Asia. If we talk about statistics all over the world, it is impossible not to note that yellow root vegetables are the most in demand and popular. We use them little, since cylindrical orange carrots are common. It is very difficult to find yellow carrots for sale here, however, they have very useful qualities:

  • it is also distinguished by high productivity;
  • The fruits are quite sweet.
