Pies with nettles are an original and very tasty pastry. And when it comes to benefits, this green is not inferior to any other. It is not difficult to prepare such pies; all the necessary ingredients can be found in the refrigerator or at the nearest store. You just need to find out in advance some of the nuances and secrets regarding this baking.

The dough for such pies is not the main thing. It can be either yeast-based (store-bought or homemade), or flaky; you can even wrap the filling in thin pita bread. Therefore, special attention is paid to their content. Nettle does not impart any specific taste to pies; it is “responsible” for the undoubted health benefits of baked goods and the original aroma.

It is critical to use good quality and environmentally friendly greens for the filling. It is collected as far as possible from populated areas and any civilization in general, especially from highways and industrial enterprises.

The juiciest grass with a pronounced aroma should be looked for along the banks of reservoirs or in lowlands. Its leaves are darker and larger than usual. The first nettles (May and June) are collected simply by hand. In mid-summer and later, it is necessary to wear thick gloves.

To turn nettles into a “semi-finished” filling for pies, you need to get rid of the stems and the lowest ones and the old, dried leaves. The remaining greens are poured with boiling water for a couple of minutes, then with ice (or at least very cold) water for about the same amount.

Important! If the benefits of nettle are critical, it must be collected before flowering. But not everyone can eat it: greens are contraindicated during pregnancy and thrombosis.

Pies with nettles, cottage cheese and onions

Dough that is suitable for other recipes. The baked goods turn out tender, fluffy, and do not go stale for a long time. Required:

  • premium wheat flour – 500 g;
  • sour cream 20% fat – 200 g;
  • chicken egg – 3 pieces;
  • vegetable oil (sunflower or olive) – 100 ml;
  • sugar – 70 g;
  • dry yeast - 1.5 tsp;
  • salt – 1 tsp.

Filling ingredients:

  • cottage cheese – 400 g;
  • fresh nettle – 100 g;
  • any fresh herbs - to taste and optional;
  • chicken egg - 2 pieces (one for the filling, the second for brushing the finished pies before baking).

How to prepare pies with nettles:

  1. Pour oil, sour cream into a deep container, break eggs, shake lightly.
  2. Sift the flour there, gradually add sugar, salt and yeast.
  3. Knead the dough for 10-15 minutes, cover the container with cling film, and leave in a warm place for an hour. Knead lightly and leave for another hour.
  4. Boil an egg hard and chop it. Finely chop the nettles and onions and mix everything with the cottage cheese. To ensure a uniform consistency, beat everything with a blender.
  5. Gradually separate portioned “balls” from the finished dough, flatten them into flat cakes, place the filling in the center and carefully pinch the edges. Form - at your discretion.
  6. Place the pies seam side down on a parchment paper-lined or greased baking sheet. Let stand for 25-30 minutes.Brush the top with beaten egg yolk.
  7. Bake in an oven preheated to 180°C for 25-35 minutes.

    Important! The fat content of the cottage cheese in this recipe is not important, but you need to pay attention to the consistency - it should be dry, not pasty.

Pies with nettles and eggs

In all the usual pies with green onions and eggs, the first ingredient in the filling can be replaced with nettles. For 0.5 kg of finished yeast dough you will need:

  • fresh nettle – 100 g;
  • leek (or regular green) – 50 g;
  • chicken egg – 3 pieces;
  • salt - to taste (about 5-7 g);
  • sunflower or olive oil – 3 tbsp. l.

How to prepare the filling:

  1. Boil the eggs hard, chop finely or mash with a fork.
  2. Chop the onion and fresh nettle.
  3. Mix eggs and herbs, add salt and vegetable oil, mix well.
  4. Form pies, place on a baking sheet, brush with yolk. Bake for about half an hour in the oven at 180°C.

    Important! It is better to let the finished pies sit on a plate or napkin under a clean towel for about half an hour. This will make the baked goods juicier.

Recipe for pies with nettles and spinach

The filling contains (per 1 kg of dough):

  • spinach – 200 g;
  • fresh nettle – 200 g;
  • medium onion – 1 piece;
  • mushrooms – 200 g;
  • cheese (any hard) 100 g;
  • salt and pepper - to taste;
  • vegetable oil - for frying.

It is prepared according to the following instructions:

  1. Fry finely chopped onion in a small amount of oil until golden brown. Add mushrooms to the same pan and fry until tender. Place on a paper towel to drain excess oil.
  2. Blanch the greens for 2-3 minutes. Drain the water through a colander.
  3. Mix all the ingredients for the filling, salt and pepper.
  4. Make open pies. Sprinkle grated cheese on top.
  5. Bake for half an hour at 200°C.

    Important! If desired, you can add other ingredients to the filling - boiled rice, cottage cheese or soft cheese (about 200 g), and other fresh herbs to taste.

Delicious nettle pies with cheese

What you need for the filling:

  • fresh nettle – 100 g;
  • green onions – 50 g (optional, if you don’t put them in, you need to increase the mass of nettles accordingly);
  • soft goat cheese – 100 g;
  • butter - for frying;
  • egg yolk - for greasing.

The pies are prepared like this:

  1. Finely chop the nettles and onions. Fry for 2-3 minutes in melted or butter.
  2. Mash the cheese with a fork and mix with the cooled herbs.
  3. Form and fill pies. Fry in a frying pan until golden brown.
