Making homemade rowan wine

It is so intended by nature that few people simply consume rowan berries fresh, since they have a bitter, astringent taste. But it’s quite suitable for jams and preserves. And what a delicious wine it makes! Rowan has long been used in winemaking.

Homemade red rowan wine has a tart aroma. But that's not even the main thing. Rowan wine also has healing properties. It supports the immune system, improves blood circulation and metabolic processes in the body. In addition, this drink contains a large amount of vitamins and microelements.

Cooking berries

An intoxicating drink from rowan, prepared at home, can be prepared by any housewife or owner, if there is desire and patience. But the main thing is to pick the berries on time so that the finished drink does not contain bitterness. That is why the fruits are collected to make wine at home after frost. Due to the fact that the berry is hit by frost, it becomes sweeter, as its sugar content increases to the maximum.

Attention! If the rowan was harvested before frost, then it should be placed in the freezer for at least a day.

To make homemade red rowan wine, you can use wild or cultivated rowan berries. But the most luxurious drink with an exquisite taste is obtained from the following varieties: “Granatny”, “Likerny”, “Burka”. Dessert rowan wine is strong and aromatic.

To prepare one liter of intoxicating drink, you need from 4 to 4.5 kg of berries. Before preparing the wort, you need to remove the branches, but washing is not necessary, since it still needs to be filled with boiling water before preparing the wine.

About the beneficial properties of wine

As we have already noted, homemade rowan wine is a valuable product. Let's talk about this in more detail:

  • diuretic, choleretic and diaphoretic properties are noted;
  • saves from colds;
  • promotes easy bowel cleansing;
  • stimulates the functioning of the heart, liver, stomach;

To improve the taste, winemakers add cranberry, apple or other juices to rowan wine. For example, add six parts of apple juice to four servings of rowan juice.

How to make wine correctly - recipes

There are many technologies and recipes for making rowan wine, but we will talk about how to make homemade wine from rowan berries simply, without any special problems. The intoxicating drink turns out to be a delicate orange-pink color.

Recipe one - a winemaking classic

To prepare rowan wine at home, we will need the following components:

  • rowan – 10 kg;
  • water 4 liters (if desired, add apple juice in a 1:1 ratio);
  • granulated sugar – 2 kg;
  • raisins – 150 grams (can be replaced with grapes).

Cooking features

  1. Before preparing wine at home, pour boiling water over the berries without stems for half an hour. We will repeat this procedure twice. Thanks to this, there will be less tannins, and the finished wine will not be too tart.
  2. We pass the prepared berries through a meat grinder and squeeze them through cotton cloth or gauze in several layers.
  3. Place the pulp in a wide-necked bottle and fill it with water at a temperature of 70 degrees. After stirring, leave to cool to room temperature.
  4. Then add rowan juice, the first part of granulated sugar, and unwashed grapes. The grapes for homemade rowan wine are crushed at home, but there is no need to wash them, since the whitish coating on them is responsible for successful fermentation.
  5. After mixing the ingredients, tie the neck of the bottle with gauze and place the wort in a warm (18 degrees) and dark place.
  6. During fermentation, the future rowan wine will begin to foam and a sour smell will be felt. This is a signal: it’s time to filter the wort.
  7. Add sugar to the juice without pulp of the berries and set the homemade wine to ferment again. The container should be large so that a third of the vessel is not filled. You need to put a glove on the bottle, after first piercing one of your fingers with a needle. Under the influence of gases, the glove will inflate, and at the end of fermentation it will fall.
  8. The wort for homemade wine should ferment for the second time for at least two weeks in a dark and very warm place. It is necessary to maintain the temperature from 20 to 30 degrees. At this time, gas bubbles will be observed in the container, “cruising” up and down.
  9. When the bubbles disappear and the bottom of the container is covered with sediment, pour the young rowan wine prepared at home into clean, sterilized bottles. This must be done carefully so as not to raise dregs.
  10. We close them hermetically and put them in a cool place at a temperature of no more than 15 degrees. The containers should not be exposed to sunlight. Young wine should sit for about 4 months and should not be touched. During this time, the wine will not only reach the desired condition, but also new sediment will appear at the bottom.

Drain off the sediment again. Delicious red rowan wine at home according to the classic recipe is ready. We close the bottles, place them horizontally and put them in a cool place.

Comment! The output is approximately 4.5 liters of delicious tart table wine from rowan with a strength of 10 to 15 degrees.

Such wine, provided the correct storage conditions are created, does not spoil for several years. Moreover, the longer the aging, the tastier and sweeter the intoxicating drink becomes.

Recipe two

Let's prepare in advance:

  • 2 kg of berries;
  • granulated sugar – 2 kg;
  • water – 8 liters;
  • ammonium chloride – 0.3 grams per liter of wort.

Let's start cooking

  1. First you need to cook the rowan. The berries need to be thawed and poured with boiling water for half an hour. Then pour over with cold water, let the liquid drain and prepare puree from the red rowan fruits in any convenient way.
  2. Transfer the mass into a large bottle, add water, pour in one kilogram of granulated sugar and ammonium. If such an ingredient is not available, replace it with raisins.
  3. We put a medical glove on top of the bottle, first pierce any finger with a needle and put it in a warm place to ferment.
  4. After a while the process stops, it's time to add the rest of the sugar.

After secondary fermentation, drain the homemade rowan wine from the sediment, pour it into clean bottles, and seal it hermetically. The drink will mature for at least four months. Before use, it must be strained and poured into another container.

Attention! The readiness of rowan wine prepared at home is determined by the sediment that has fallen.

The third recipe is simple.

Making rowan wine according to a simple recipe is really not difficult, and the ingredients are minimal: rowan - 2 kg and sugar to taste. As a rule, add about one and a half kilograms of granulated sugar to 2.5 liters of water.

Attention! Sweet wine lovers may want to add a little more.

Defrost the berries and pour boiling water over them. Grind it in a meat grinder, and then squeeze out the juice and pour it into a bottle. Let's add water and sugar to the future wine at our discretion, after tasting it.

When the granulated sugar has dissolved, put a water seal on the container or put on a rubber glove and leave it for fermentation. When the process is complete, remove the water seal or glove, filter the sediment and pour into sterile bottles.

Homemade rowan wine is aromatic and has a tart taste.

Recipe four

We will need:

  • 2 kg of red rowan berries;
  • 9 liters of water;
  • granulated sugar at your discretion;
  • a handful of raisins.

Advice! Using this wine recipe, instead of red berries, you can take chokeberry, which is popularly called chokeberry or chokeberry.

Place the defrosted and chopped berries for making wine in a large container and fill with 9 liters of boiling water. Cover with gauze and leave to ferment. At the very beginning of the process, strain the base and add sugar.

After dissolving the sugar, immediately pour it into bottles and put 3 raisins in each bottle. There is no need to wash it, since yeast fungi are located on its surface.

Close the container with wine hermetically and put it in a cool and dark place. We place the bottles horizontally and wait about 3-4 months for the fermentation process to complete.

Instead of a conclusion - advice

  1. If desired, you can use apple juice instead of water, no more than half the volume.
  2. It is better to take black raisins; fermentation is more intense with them.
  3. According to recipes, it is recommended to add sugar twice when making wine. But some winemakers divide this process into three parts. This allows you to control the fermentation process and select the desired sweetness of the wine.
  4. If you want to get a sweet, intoxicating drink, you can add from 500 grams to 4 kg of sugar, not counting the ingredient specified in the recipe.
