Recipes for raspberry jam were passed down from mothers to daughters back in Ancient Rus'. Dozens of methods for preparing medicinal delicacies have survived to this day. Instead of sugar, housewives used molasses or honey, and the cooking process was a whole ritual. Nowadays wild raspberry jam is prepared much faster and easier, but the dessert is invariably prepared for the winter.

  • vitamins A, C, E, PP, B2;
  • various microelements (potassium, calcium, iron, magnesium, copper, zinc);

Over the years, many ways to prepare the delicacy have been invented. But the basis of the dish invariably consists of two ingredients - raspberries and sugar.

Classic wild raspberry jam

In the classic recipe for preparing raspberries, there are only two components - berries and sugar, which are taken in equal parts. A similar amount of granulated sugar is used per kilogram of raw materials.

Important! Wild raspberries are very tender, after picking they quickly lose their beneficial properties and produce juice. Therefore, it is better to harvest berries immediately after they reach the table from the forest.

Procurement process:

  1. The raspberries are thoroughly washed and cleared of debris.
  2. Pour the raw materials into the pan, add half the required amount of sugar on top. Leave the mixture for several hours. This time is necessary for the berry to produce aromatic juice.
  3. Place the pan on low heat. After the jam boils, it is removed from the stove and left to infuse overnight.
  4. The next day, the container with raspberries is placed on the fire again, brought to a boil, and removed.
  5. At this point, add the remaining amount of granulated sugar and mix thoroughly until the sugar crystals are completely dissolved.
  6. The jam is poured into sterilized jars.

This method of harvesting wild raspberries allows you to preserve the beneficial properties of the berries. They are not subject to long-term heat treatment. Boiling for several minutes is necessary to completely dissolve the sugar and better store the dessert in winter.

Raw wild raspberry jam for the winter

To make raw wild raspberry jam, you need the berry itself and granulated sugar. Per kilogram of raw materials take from 1.2 to 1.7 kg of sugar, depending on how sweet, dense, and full of juice the berries are.

Step by step guide:

  1. Rinse wild raspberries. Water will cleanse it of dust and dirt, insects, and litter. To do this, it is convenient to use a colander and a container of water. It is not recommended to wash berries under running water; they are easily destroyed. Leave the peeled raspberries in a colander for a few minutes to allow the water to drain.
  2. Grind the berries. To do this, you can use a blender or pour the raspberries into a saucepan and grind them into a puree. The first method is convenient for procuring large quantities of raw materials. The second one will appeal to those who like whole berries in their dessert.
  3. Crushed forest raspberries are covered with sugar, mixed, and left for 4 hours. During this time, granulated sugar should completely dissolve. It is not recommended to keep the mixture longer; it may begin to deteriorate.
  4. Then the berries are mixed again. The jam is placed in pre-sterilized small jars and covered with lids.

Calorie content

100 grams of fresh raspberries contain only 46 kilocalories. After it turns into jam, the caloric content due to the sugar content increases sharply - up to 270 kilocalories. In order for dessert to bring only benefits, it should be consumed in limited quantities.

Advice! There is a way to reduce the calorie content of wild raspberry jam to 150 kilocalories. To do this, you can add fructose rather than granulated sugar to the dessert.

Terms and conditions of storage

The optimal place to store jam is the bottom shelf of the refrigerator.If it is not possible to place the dessert in the refrigerator, when choosing a place it is worth considering that:

  • cans should not be placed near heat sources;
  • the room must be dry, otherwise mold will appear in the jam;
  • workpieces should be protected from sudden temperature changes;
  • A ventilated kitchen cabinet or pantry may be a suitable storage location.
