Successful options for pickling cabbage with aspirin
The main methods that have been tested by housewives and have received their recognition are the cold and hot method of salting cabbage with aspirin. The vegetable is pickled in various containers - tubs, buckets, plastic containers. But the most common one is in glass bottles. In this case, the workpiece can be safely placed in the refrigerator, which is convenient for residents of high-rise buildings.
Some nuances for housewives to note:
- Delicious crispy cabbage with pharmaceutical aspirin is obtained from mid-late varieties.The later ones are less juicy, so they take longer to pickle. And from the early varieties, the preparations are soft without a characteristic crunch and have a short shelf life.
- Carrot. We choose sweet, juicy varieties with bright, rich colors. Then, our cabbage with aspirin will look very attractive on the table.
- Many recipes contain acetic acid. Some people try not to use it and replace it with citric acid. In our case, we are considering options using acetylsalicylic acid or aspirin.
You can salt cabbage with aspirin tablets and add your favorite spices. For example, carnations. In addition to acid and salt, a rich spicy aroma will be felt in our preparation.
Choosing a cold salting recipe
For this method, we will prepare strong white heads of mid-late cabbage. 3-4 pieces are enough depending on the size; carrots will need 5-6 pieces. Other ingredients:
- water – 4.5 liters;
- bay leaf – 5-6 pieces;
- allspice peas – 10 pieces;
- acetic acid – 2 tablespoons;
- sugar – 2 cups;
- table salt – 1 glass;
- acetylsalicylic acid tablets – 2 pieces.
If we salt cabbage in glass bottles, we will also pay attention to them. Wash, sterilize, dry.
To marinate cabbage, you need to prepare brine. Boil water with spices, then pour in acetic acid and immediately remove the dishes from the heat. Leave the brine to cool.
At this moment we are preparing the vegetables. Shred cabbage for pickling with aspirin in a convenient way. Those who like a kitchen shredder for vegetables are great; many housewives are accustomed to using a convenient knife with a wide blade.
Wash the carrots, peel them, and grate them on a grater with large holes.
Place cabbage and carrots in sterilized banks and try the temperature of the brine. If it has cooled down, then immediately pour it into jars. Place aspirin on top and roll up. If vinegar is categorically undesirable, then add another aspirin tablet.
Tips for cold pickling:
- We use only coarse table salt. Iodized or fine is not suitable. The first is due to the presence of iodine, the second does not provide a rich salty taste.
- Mix the chopped vegetables only with your hands. To make the cabbage with aspirin crispy, do not use a spoon or spatula.
- When you come across unripe heads of cabbage for pickling, keep them in boiling water for 2 minutes. This way the bitter taste will go away.
- The jars can be rolled up, or you can simply close them with nylon lids and put them in a cool place.
The method of preparing cold-salted cabbage with aspirin is very popular. It is time-saving and does not require sterilization, which many housewives avoid.
Hot method of pickling vegetables
The name of the method itself suggests that in this case we will need hot brine for pouring. The ratio of vegetables and spices can be left as in the previous version.
Wash the carrots, peel and grate. Peel the cabbage from the top leaves and stalks and chop.
Mix vegetables in a separate bowl. Do not rub or wrinkle!
Place a couple of laurel leaves, a few peppercorns and 1 aspirin tablet at the bottom of a sterile jar. Fill one third with a mixture of vegetables.
We start the next layer the same way - laurel, pepper, aspirin, cabbage and carrots.
We repeat three times. We do not add vinegar.
We boil water with the required amount of sugar and salt, pour in the vegetable mix and complete our actions by adding a couple of clove inflorescences.
Roll up the lids and turn the jars over to cool. If you wrap them, this process will occur more slowly, which is very useful for the preparation.
Conclusion
The advantage of salted cabbage with aspirin over other types of pickling is that it can be stored for a long time. If you don’t eat it right away, you can use the delicious cabbage for several years. It does not lose its quality, it remains just as crispy and healthy.
