Nettle dumplings are a somewhat unusual option for a dish, but very healthy and tasty. You can prepare them with the addition of various ingredients, spices, or use only herbs. Kurze is shaped into dumplings or traditional dumplings. The edges are pinched with a pigtail or in the usual way.

Kurze – large dumplings with nettles

For the filling, take a young plant, cut off the tops, about 10–15 cm each. The stems are not processed, the leaves must be separated and prepared.

Advice! To prevent the plant from burning your hands, the preparation of raw materials and further processing are carried out wearing rubber gloves.

Features of preparing nettles for kurze:

  1. The leaves are separated from the stems and examined.If the quality of the raw material is in doubt, it is rejected.
  2. The green mass is washed under the tap.
  3. In order for small insects to float to the surface, the grass is placed in a wide container and filled with salted water.
  4. Cover with a lid and leave for 15 minutes.
  5. Place the workpiece in a colander and allow the water to drain. Place on a napkin to evaporate moisture.

Some recipes recommend pouring boiling water over the leaves, but after heat treatment the plant will lose some of its vitamins.

The nettles are ground into minced meat; this will require a large knife.

Classic recipe for kurze with nettles

The classic version of preparing dumplings with nettles in Dagestan is the most common and simplest recipe. It requires a minimum of ingredients.

Products for filling:

  • crushed nettle – 500 g;
  • large onion - 2 pcs.;
  • sunflower and butter - 1 tbsp. l.
  • egg – 2 pcs.

Preparation:

  1. The onion is chopped.
  2. Add oil to the pan, pour in the onion stock.
  3. Fry until dark yellow.
  4. Add eggs and onions to the green mass and mix.

The filling is ready. Knead the dough from the following components:

  • flour – 1 kg;
  • water – 250–300 ml;
  • sunflower oil – 3 tbsp. l.;
  • egg – 1 pc.;
  • salt – 1 tsp.

Cooking process:

  1. Sift the flour through a sieve into a wide bowl.
  2. A small depression is made in the center.
  3. Add salt.
  4. Break the egg into the water and beat it.
  5. Pour the liquid into the flour and add butter.
  6. Knead well on a flat surface coated with flour.
  7. Place the dough in a bag, tie it and leave for 20–30 minutes. in a refrigerator.
  8. The cooled mass is mixed again.
  9. Cut a piece and roll out a long thin cylinder.
  10. Divide the workpiece into equal small parts.
  11. Roll out the flatbreads.
  12. Place the filling in the center with a spoon so that there is free dough left for pinch-pig.
  13. Place a pan of salted water on the fire. Dumplings are dipped in boiling liquid and cooked for 7 minutes.

Kurze is served hot with butter or sour cream.

Fresh nettle dumplings with nuts

You can prepare dumplings with nettles and walnuts; they taste just as good as meat dumplings, but the nutritional value is much higher.

Filling:

  • walnut kernels – 250 g;
  • onions – 3 pcs.;
  • crushed nettle – 300 g;
  • garlic – 4 cloves;
  • salt and pepper - to taste;
  • ghee - 2 tbsp. l. (can be replaced with vegetable);
  • egg – 2 pcs.

Preparation of filling for dumplings:

  1. Finely chop the onion and fry in oil until yellow.
  2. Garlic is crushed.
  3. Nuts are crushed with a blender or using a meat grinder.
  4. Eggs, garlic and fried onions are added to the nettle mass.
  5. Mix everything, salt and pepper to taste.

Set aside the filling for the dumplings and knead the dough. Required ingredients:

  • flour – 500 g;
  • water – 150 ml;
  • egg – 1 pc.;
  • salt – 1 tsp.

Knead the dough. Leave it in the bag in the refrigerator for 15 minutes. Then mix again. In 10 minutes. you can form disks for dumplings. Place the filling in the center of each flatbread and pinch the edges. Can be made in the form of a traditional dumpling or as a dumpling. Cook kurze in salted water.

Important! The dish is prepared immediately after modeling; this recipe is not suitable for freezing, as the nuts lose their taste.

Before serving, add sour cream or any sauce to the kurze

With meat in Polish

To prepare the dish, you can take ready-made dough (300 g) or make it yourself:

  • flour – 250 g;
  • water – 70 ml;
  • egg – 2 pcs.;
  • salt – ½ tsp.

The finished dough is wrapped in cling film and left for 20 minutes, then mixed again. They are formed into disks, the size of which is slightly larger than that of regular dumplings.

Filling:

  • nettle – 150 g;
  • minced pork – 150 g (you can use another one);
  • rendered fat (lard) – 1 tbsp. l.;
  • onions – 2 pcs.;
  • pepper, salt - to taste.

Preparation:

  1. Boil nettles in salted water for 10 minutes.
  2. To get rid of water, drain in a colander.
  3. Finely chop the onion and sauté in pork fat until golden brown.
  4. Mix the green mass and onions, taste for salt and pepper.
  5. Add the minced meat to the nettles and mix.

The dough is rolled out into a thin disc and cut into circles. They make kurze. Boil in salted water for 10 minutes.

Dumplings are served with sour cream and melted butter or replaced with garlic sour cream sauce

Kurze with nettles and cottage cheese

The dough is made in the traditional way, without adding eggs. The mass should be well kneaded and kept in the refrigerator for at least 30 minutes. You can prepare nettle kurze with the addition of cottage cheese. For the recipe you will need:

  • nettle – 300 g;
  • egg – 2 pcs.;
  • cottage cheese – 200 g;
  • vegetable or melted butter – 2 tbsp. l.;
  • salt, pepper - to taste.

Preparing the filling:

  1. Finely chop the onion, place it in a frying pan with oil, and cook until soft.
  2. The plant preparation is added to the frying pan. Simmer together with the onion, stirring constantly, for no longer than five minutes.
  3. At the end of the process, add salt and pepper.
  4. Place in a bowl and let the mixture cool completely.
  5. Add eggs and cottage cheese.

Knead the dough and make dumplings of any convenient shape. Allow salted water to boil, add kurze, and cook for 7–10 minutes. According to the recipe, you can prepare the semi-finished product in large quantities and place it in the freezer.

Attention! After defrosting, the filling does not lose its taste and nutritional value.
