  • 2 kg of eggplants;
  • 5 large tomatoes;
  • 5 bell peppers;
  • 2 heads of garlic;
  • 2 small pods of hot pepper;
  • 0.5 cups sugar;
  • spoon of salt;
  • a stack of sunflower oil;
  • a glass of vinegar (9%).

The blue ones need to be cut into long narrow strips, salted and left for half an hour or an hour. The remaining vegetables should be chopped using a meat grinder, salt, vinegar and sunflower oil should be added to this mass.

Important! The bitterness should go away from the eggplants, this is the point of leaving them in salt. After the specified time, the juice of the eggplants must be drained, and the blue ones themselves must be lightly squeezed.

  1. Cut the eggplants into large cubes.
  2. Cut the bell pepper and hot pepper pods into slightly smaller cubes.
  3. Pour all the vegetables into a common bowl, add the remaining ingredients, leaving only the vinegar essence.
  4. Boil the salad over low heat for about half an hour, remembering to stir constantly.
  5. Add vinegar to the almost ready “Mother-in-Law’s Tongue” and mix the salad thoroughly.

All that remains is to put the snack in sterilized jars and roll up their lids.

Attention! For wrapping any salads, it is better to use sterile jars. Several ingredients are used, in this case there is a high risk of jars “exploding” due to the non-absolute sterility of the product.

As already mentioned, “Mother-in-law’s tongue” can be prepared not only from blue ones; zucchini is often used as the main ingredient. This vegetable is more tender, does not have a rough peel and hard seeds, and the zucchini salad turns out softer and more uniform.

Let's look at the technology for preparing this winter salad step by step with photographs:

  1. Half a glass of tomato paste must be diluted with boiled water (in the amount of half a glass) and bring the resulting mixture to a boil.
  2. Chop two pods of bitter and sweet pepper with a knife.
  3. The head of garlic is passed through a press or very finely chopped with a knife.
  4. A kilogram of young zucchini should be cut into long narrow “tongues”.
  5. Boil tomato sauce, add all the chopped and crushed ingredients, two tablespoons of salt, half a glass of sugar, a little vegetable oil. Cook “Mother-in-law’s tongue” over low heat for half an hour.
  6. At the end of preparation, add a tablespoon of vinegar to the salad, mix and place “Mother-in-law’s tongue” in sterilized jars.

 

Advice! During the first day after preparation, the seaming must be kept warm so that the preservatives cool down as slowly as possible. Therefore, it is customary to wrap sealed salads in blankets and blankets.

How to cook “Mother-in-law’s tongue” from cucumbers

There is an even more unconventional recipe for this snack, which uses cucumbers. For “Mother-in-Law’s Tongue,” you need to take large cucumbers so that they don’t soften too much after cooking.

Advice! It is good to use overripe cucumbers from your own garden for salad preparations.

The ingredients you will need are the following:

  • cucumbers – 3 kilograms;
  • tomatoes – 1.5 kilograms;
  • bell pepper – 4 pieces;
  • hot pepper – 1 pod;
  • garlic – 2 heads;
  • salt – 2 tablespoons;
  • sugar - half a glass;
  • sunflower oil - a glass;
  • vinegar - a shot glass (100 grams).

To prepare this “Mother-in-law’s tongue”, cucumbers are cut not into strips, but into circles. The thickness of the pieces should not be too large, but you should not make them thin either. Optimally, make circles 0.5-0.8 cm thick.

Bulgarian and hot peppers, garlic and tomatoes must be chopped using a meat grinder (you can use a blender). Place all the vegetables and spices in a large saucepan or enamel bowl, and mix the salad thoroughly.

Cook “Mother-in-law’s tongue” over low heat for 20-25 minutes. After this, vinegar is added to the appetizer, stirred and boiled for another 5 minutes. Now the “Tongue” can be rolled into sterile jars.

Eggplant and carrot appetizer

The standard recipe for the spicy “Tongue” can be slightly varied by adding a product such as carrots. This will make the appetizer even more satisfying, give it sweetness, and together with hot pepper, the taste will be quite piquant.

You need to prepare this dish from the following products:

  • young eggplants – 3 kg;
  • carrots – 1 kg;
  • bell pepper – 1 kg;
  • tomatoes – 1 kg;
  • garlic - a few cloves;
  • sunflower oil – 200 ml;
  • granulated sugar - glass;
  • salt – 2 tablespoons;
  • vinegar - glass.
Attention! Parsley adds a special piquancy to this recipe; it is recommended to add it to “Mother-in-Law’s Tongue” in chopped form.

The blue ones need to be cut into eight pieces lengthwise. Bell peppers, garlic, carrots and tomatoes are chopped using a meat grinder or blender. Parsley is finely chopped with a knife.

All products are mixed in a large bowl and put on fire, butter, salt and sugar are added there. After boiling, you need to cook for no more than a quarter of an hour, then add herbs and vinegar to the “Tongue”, then cook for another five minutes.
