A simple pepper recipe for the winter

Recipe 1 (simple)

Compound:

  • Bell pepper – 2 kg;
  • Onion – 1 kg;
  • Tomatoes – 2 kg;
  • Granulated sugar – 2 tbsp. l.;
  • Salt – 1 tbsp. l.;
  • Black peppercorns - to taste;
  • Allspice - to taste;
  • Bay leaf – 2 pcs.;
  • Acetic acid 9% - 3 tbsp. l.;
  • Sunflower oil – 150 g

How to cook:

  1. Vegetables are sorted, rotten and soft ones are removed, and washed.
  2. Tomatoes must be chopped: grated or using kitchen utensils.
  3. The onion is peeled and cut into half rings.
  4. Sweet peppers are freed from seeds and cut into wide strips.
  5. All parts are combined, seasoned with salt, sugar, spices, and put on gas.
  6. After boiling, the mixture is boiled over low heat for 40-60 minutes.
  7. When ready, add acetic acid, place in jars, seal and cover with a blanket until cool.

Recipe 2 (with carrots)

Components:

  • Carrots – 1 kg;
  • Sweet pepper – 3 kg;
  • Sunflower oil – 1 tbsp.;

  • Granulated sugar – 4 tbsp. l.;
  • Acetic acid 9% - 100 ml.

How to cook:

  1. Carrots are thoroughly washed, peeled and chopped on a fine grater.
  2. The seeds are removed from the sweet pepper. Cut it into large cubes.
  3. In a large container, bring tomato paste, sunflower oil, salt, and sugar to a boil.
  4. After boiling, add vegetables and boil the mixture for 30-40 minutes.
  5. At the end of preparation, a preservative, acetic acid, is added and quickly packaged in sterile jars.

The simplest recipe for lecho for the winter. However, you will be pleased with the taste. The rich, bright color will remind you of summer and increase your appetite.

Recipe 3 (with eggplants and zucchini)

Compound:

  • Eggplants – 1 kg;
  • Zucchini – 1 kg;
  • Bell pepper – 1 kg;
  • Carrots – 1 kg;
  • Tomatoes – 3 kg;
  • Garlic – 0.1 kg;
  • Salt – 50 g;
  • Granulated sugar - 1.5 tbsp;
  • Greens: dill, parsley - to taste;
  • Sunflower oil – 1.5 tbsp;
  • Peppercorns – 5-6 pcs.;
  • Allspice – 5-6 pcs.;
  • Bay leaf – 2 pcs.;
  • Acetic acid 9% - 100 ml.

How to cook:

  1. Wash the eggplants, cut into circles or halves if the fruits are large.
  2. Zucchini is washed, freed from seeds and skins and cut into half rings if the fruits are old. Young fruits are cut into circles, leaving the skin.
  3. The peppers are washed, seeds removed and cut fairly large.
  4. Carrots are washed, peeled and grated.
  5. The garlic is peeled and chopped.
  6. The greens are finely chopped.
  7. Tomatoes are crushed into puree with a meat grinder or blender.
  8. Sunflower oil, spices, herbs, salt, sugar, and garlic are added to the tomato mass.
  9. Prepared vegetables are placed in a cooking vessel and poured with tomato mass.
  10. Set to cook for 40-60 minutes.
  11. At the end of cooking, vinegar is added and placed in sterile jars.
  12. Cover with a blanket for gradual cooling.

The good thing about this preparation is that the vegetables remain whole pieces and they are different, soaked in tomato sauce.

Recipe 4 (with tomato juice)

Compound:

  • Sweet pepper – 1 kg;
  • Tomato juice – 1 l;
  • Salt – 2 tbsp. l.;
  • Granulated sugar – 1 tbsp. 4
  • Acetic acid 9% - 1/2 tbsp.

Cooking steps:

  1. From tomato juice, salt, granulated sugar and vinegar prepare the marinade. All ingredients are mixed and brought to a boil.
  2. While the mixture is boiling, work on the pepper. It is washed, seeds and stalks are removed, and cut into cubes.
  3. Dip into the marinade and cook until the pepper is ready for 20-30 minutes.
  4. The finished mass is laid out in sterile jars.

Recipe 5 (tomato lecho)

Products for cooking:

  • Carrots – 1 kg;
  • Bell pepper – 2 kg;
  • Tomatoes (meaty) – 2 kg;
  • Onions – 1 kg;
  • Capsicum – 1-3 pcs.;
  • Garlic – 6 cloves;
  • Salt – 1.5 tbsp. l.;
  • Granulated sugar - 1 tbsp.;
  • Sunflower oil – 1 tbsp.;
  • Acetic acid 9% - 1/2 tbsp.

Cooking method:

  1. Grind tomatoes into puree in any way.
  2. Place on the stove and boil for about 20 minutes.
  3. Add salt, sugar, garlic, finely chopped, hot pepper without seeds and cut into small pieces, as well as vegetable oil.
  4. Bring the mixture to a boil and cook for 10-15 minutes.
  5. In the meantime, they are preparing vegetables, which should be washed in advance.
  6. Grate carrots.
  7. The pepper is freed from seeds and cut into strips or cubes.
  8. The onion is peeled and also cut. Try to keep the pieces approximately the same size.
  9. The vegetables are combined with the tomato mass simmering on the fire and cooked for 30-40 minutes.
  10. Add vinegar 5-10 minutes before the end of cooking. Bring to a boil and place the winter preparation in sterile jars.

Advice! Along with vegetables, you can add any aromatic herbs that will give the dish new flavor nuances. It can be parsley, basil, marjoram and others.

Recipe 6 (with eggplant)

Compound:

  • Eggplants – 2 kg;
  • Bell pepper – 3 kg;
  • Tomatoes – 3 kg;
  • Onions – 1 kg;
  • Garlic – 1 head;
  • Carrots – 2 pcs.;
  • Sunflower oil – 1 tbsp.;
  • Acetic acid 9% - 1/2 tbsp.;
  • Salt – 100 g;
  • Granulated sugar – 100 g;
  • Ground black pepper - to taste;
  • Capsicum - to taste.

How to cook:

  1. Vegetables are sorted, washed, dried.
  2. Tomatoes are crushed into puree in any way.
  3. Eggplants are cut into rings or halves.
  4. Grate carrots.
  5. The seeds are removed from the peppers and cut as desired.
  6. The onion is peeled and cut into half rings.
  7. The garlic is chopped.
  8. Combine all ingredients: eggplant, peppers, grated tomatoes, onions, garlic, sunflower oil, sugar, salt.
  9. Set to cook for 40-50 minutes.
  10. At the end of cooking, as usual, add ground pepper and vinegar. Place in sterile jars and seal.

A delicious vegetable salad in which slices of bell pepper are supplemented with pieces of eggplant is easy to make.

Recipe 7 (Italian)

What you will need:

  • sweet pepper – 1 kg;
  • canned tomatoes in slices in their own juice – 1 can;
  • Extra virgin olive oil – 2 tbsp;
  • Onions – 1 pc. medium size;
  • Salt - to taste;
  • Ground pepper - to taste;
  • Sugar – 1 tsp.

What to do:

  1. The seeds are removed from the pepper and cut into squares.
  2. In a thick-walled bowl, simmer the chopped onion until transparent. Not fried.
  3. Add chopped peppers and tomatoes along with liquid to the onions.
  4. Mix everything well and simmer over low heat for about half an hour. If the lecho seems watery, increase the cooking time and remove the lid.
  5. At the end of cooking, add salt, sugar and pepper. If the taste of the product seems sour, then even out the taste by adding another 1-2 tsp of granulated sugar.
  6. Bring everything to a boil again and put it into jars. Store the product in the refrigerator.

Recipe 8 (with zucchini)

Compound:

  • Zucchini – 2 kg;
  • Bell pepper – 1 kg;
  • Tomatoes – 1.5 kg;
  • Onions – 1.5 kg;
  • Ready tomato paste – 300 g;
  • Sunflower oil – 1 tbsp.;
  • Salt – 1 tbsp. l.;
  • Granulated sugar - 1 tbsp.;
  • Acetic acid 9% - 1/2 tbsp.

Procedure:

  1. Wash the zucchini, remove skin and seeds, and cut into cubes. Young zucchini does not need to be peeled.
  2. The peppers are washed, seeds and stalks are removed, and cut into squares or strips.
  3. Peel the onion and cut it into half rings.
  4. The tomatoes are washed and cut into slices. You can first peel them by dousing them with boiling water.
  5. Prepare the liquid component: pour 1 liter of water, oil into a thick-bottomed bowl, add tomato paste, salt, and sugar.
  6. Bring to a boil, add zucchini and cook for 10 minutes.
  7. Then add tomatoes in slices and peppers. Cook for another 10 minutes.
  8. At the end of cooking, sour with vinegar.And spread the hot mass into sterile containers.

Advice! Try the lecho at the end of cooking. Adjust for spices. Vegetables should be cooked, but not out of shape.
