The process of preparing zucchini caviar in a Panasonic multicooker is so simple that it only requires the ability to cut vegetables.
You can use the ingredients for caviar that you are used to. It is better if they are cut into small pieces. In this case, the oil content will be minimal, since the vegetables are actually stewed in their own juice.There is probably no need to mention the benefits of such dishes; everyone knows about them.
This recipe allows you to use the capabilities of the device to obtain dietary products at 100%. It does not contain tomato components, bell peppers, or onions and can be safely recommended for diseases of the liver, gall bladder and pancreas. The somewhat bland taste is diluted by the addition of peppercorns, bay leaves and herbs.
Zucchini caviar for those on a diet
For 1 kg of zucchini you will need:
- grated carrots – 400g;
- parsley and dill - a small bunch;
- vegetable oil - 1-2 tbsp. spoons;
- salt - to taste;
- bay leaf – 3 pcs.;
- peppercorns – 5 pcs.
The oil in this recipe is added not at the beginning, but at the end of cooking. Peel the zucchini, remove the seeds and cut into cubes. Place them together with grated carrots and spices in a multicooker bowl and cook in the “Stew” mode for about an hour. The finished caviar is strained in a colander and pureed using a blender.
The dish can be served by pouring vegetable oil and sprinkling with chopped herbs. It is stored in the refrigerator for 2 days.
For winter preparation, pureed caviar with added oil will have to be heated in a multicooker in the “Baking” mode for about 10 minutes and immediately rolled up in sterile jars with the same lids. We will add greens when serving.
For those who do not need a diet, caviar may include more ingredients. This will make it much tastier.
Classic squash caviar
A large number of components will make the taste of this dish rich and rich.Dried dill will give it some zest, and olive oil will provide health benefits.
For 2 zucchini you will need:
- onions, carrots, sweet peppers 1 pc.;
- tomatoes – 2 pcs.;
- garlic – 2 cloves;
- dried dill - half a teaspoon;
- olive oil – 1 tbsp. spoon.
Add salt and pepper to taste.
If they have been stored for a long time and have lost their elasticity, it is better to add 50 ml of water to the multicooker bowl.
We cut the vegetables into cubes, only the carrots into strips. Tomatoes need to be peeled and chopped.
Place the cooked vegetables in the multicooker bowl and add oil to the bottom first. Salt, pepper if necessary, add dill, put chopped garlic on top. Cook on pilaf mode for about 2 hours. We turn the finished mixture into puree using a blender and heat it in the “Baking” mode for about 10 minutes. Place in sterile jars and seal.
Caviar with tomato paste
In this recipe, tomatoes are replaced with tomato paste. The taste of this additive changes. The cooking mode differs from the previous recipe. This kind of caviar will be no better or worse, it will be different.
For 2 fairly large zucchini you need:
- 2 onions;
- 3 carrots;
- 4 cloves of garlic;
- 2 tbsp. spoons of tomato paste;
- 1-2 tbsp. spoons of vegetable oil.
Add salt and ground pepper to taste.
Wash the vegetables, remove the seeds from the zucchini, and clean them. Three carrots on a grater, cut everything else into cubes. Pour oil into the multicooker bowl, add vegetables, add salt and pepper. Cook on the “Baking” mode for 30 minutes. Mix well and continue cooking in the “Stew” mode. This will take another 1 hour.20 minutes before the end, add thick tomato paste and chopped garlic to the vegetable mixture.
Turn the resulting caviar into puree and heat for another 10 minutes in the “Stew” mode. The finished product is packaged in sterile containers and sealed tightly with sterile lids.
