Honey ripens in each cell for 3-8 days, after which the bees seal it. Frames begin to be collected when the number of cells with mature honey is at least ¾ of their total number.Since unripe honey still contains about 30% water, it can spontaneously ferment and quickly deteriorate. Even using artificial ripening methods, it is impossible to achieve the usual healing properties from such a product, so it is important to track the number of cells with sealed, and therefore fully ripened, honey.
