How to quickly pickle volushki in the traditional way

The most popular is the traditional quick method of salting tremors.

To prepare you will need:

  • 2 kg of mushrooms;
  • 2 tbsp. l. salt (without a slide);
  • ¼ tsp. caraway;
  • 2 tbsp. l. Sahara;
  • 1 tsp. coriander;
  • 5 peas of allspice;
  • 3 inflorescences of dry cloves;
  • 3 pcs. laurel;
  • 500 ml water.

Preparation:

  1. Soak and peel the mushrooms.
  2. Boil them for 30 minutes over low heat. You can add an onion for flavor. After the time has passed, drain the liquid.
  3. Add all other ingredients to boiling water, stirring constantly.
  4. Place the frills tightly into jars (pre-sterilized).
  5. Pour in the spices and cover the jars with lids.

After two days of salting, the appetizer can be served.

Advice! If you plan to pickle mushrooms for the winter, then you need to add 3 tbsp. spoons of vinegar so that the preparations last longer.

How to quickly and tasty pickle volushki with garlic and currant leaves

There is another quick way to salt tremors. The secret ingredient will be currant leaves.With their help, the snack will turn out crispy and have a spicy aroma.

To prepare you will need:

  • 1.5 kg of tremors;
  • 4 things. dry clove inflorescences;
  • 5 cloves of garlic;
  • 1 liter of water (purified);
  • 4 things. allspice;
  • 3 tbsp. l. salt;
  • 7 pcs. bay and currant leaves.

Preparation:

  1. Before pickling mushrooms, they must be placed in water for 2 days, and it must be changed up to 9 times.
  2. Drain the water and leave them in a colander to drain the liquid.
  3. Heat purified water in a saucepan.
  4. Add mushrooms and cook for 15 minutes.
  5. Drain the liquid into a separate container.
  6. Place all ingredients in layers. Place currant and laurel leaves on top.
  7. Pour in a thin stream of the liquid in which the main product was cooked.
  8. Be sure to put pressure on the bedding. This way the contents will be salted.

How to quickly and correctly pickle hot mushrooms

You can quickly pickle mushrooms for the winter using the hot method. Thanks to this method, the snack will be stored for a long time, and it will take little time to prepare. To pickle 5 kg of mushrooms you will need:

  • 6 tbsp. l. salt (without a slide);
  • 2 pcs. horseradish leaves;
  • 5 pieces. laurel;
  • 3 cloves of garlic;
  • 50 g dill (fresh sprigs);
  • 2 liters of water (purified).

Preparation:

  1. Add salt to boiling water.
  2. Drop the pre-prepared mushrooms. Cook for about 10-15 minutes with bay leaf and allspice, stirring occasionally.
  3. Drain the water and cool the contents of the pan.
  4. Place a layer of frills on the bottom of the container, cover it with chopped horseradish, garlic, bay leaves, sprinkle generously with salt and dill.
  5. Add the next portion of mushrooms.
  6. The last layer should consist of leaves, since oppression must be placed on top.

After 3 weeks, the salad can be served, seasoned with vegetable oil.

Quick cold salting of tremors

There is a quick recipe for salting volushki; many call this method “salting for lazy housewives.” Its preparation will require a minimum of time, since the process does not include the stage of boiling the main product.

To prepare you will need:

  • 3 kg of tremors;
  • 50 g salt;
  • 2 cups vegetable oil;
  • 4 things. horseradish and bay leaves.

Preparation:

  1. Prepare the mushrooms (soak and peel).
  2. Drain the water.
  3. Place them on paper towels to drain.
  4. Place the volushki in a saucepan or portioned jars, periodically adding salt and chopped horseradish. The fruits should completely fill the container.
  5. Boil vegetable oil in a saucepan.
  6. When warm, pour it into a container so that the mushrooms are completely covered. Place the salted preparations in a cool place, and after 5 weeks you can enjoy the prepared dish.

How to quickly pickle mushrooms with cabbage leaves

For a quick way to pickle volushki, you will need a large container (pan or tub).

To prepare you will need:

  • 4 tbsp. l. lemon essence;
  • 2 tbsp. l. caraway;
  • 50 g dried dill;
  • 4 cup salt;
  • 5 pieces. cabbage leaves.

Preparation:

  1. Soak the peeled mushrooms in brine for 5 hours. To prepare it you will need 1 cup of salt and 1 tbsp. l. lemon essence. During this time, the brine should be changed 4 times.
  2. On a separate plate, mix cumin, dill and salt.
  3. Drain the water and leave the fruits on a paper towel for a few minutes to absorb excess water.
  4. Place the fruits, caps down, on the bottom of the pan.Their layer should be up to 7 centimeters, then cover it with spices. Place the last layer of cabbage.
  5. Place the bend on top so that it covers the entire surface.
  6. Place the container with the workpiece in a cool place.

The salting process will take about three weeks. Before eating, the volushki should be soaked so that they become less salty. Serve as a salad with vegetable oil and finely chopped onion.

Important! To check if the mushroom is edible or not, you can add an onion during cooking. If after 15 minutes the color of the onion changes to light lilac, this product should not be consumed, it is poisonous.

The recipe contains two secret ingredients - green apples and cherry leaves. With their help, the mushrooms will become elastic and crispy.

To prepare you will need:

  • 6 kg of volushki;
  • 12 pcs. dry clove buds;
  • 300 g salt;
  • 20 slices of green apples;
  • 10 cloves of garlic;
  • 10 pieces. bay and cherry leaves.

Preparation:

  1. You can pickle the product in a deep container (saucepan or tub).
  2. Place half the leaves and apples on the bottom of the pan and add salt.
  3. Place the mushrooms on the prepared “flooring” with their caps down.
  4. Sprinkle salt and grated garlic on top.
  5. Place the other half of the apples on top of the mushrooms.
  6. Remove the last layer of leaves.

Storage rules

Salted volushki are stored in a cool place, the temperature should not exceed +10 degrees. A refrigerator, pantry or cellar is suitable for such purposes.
