In some recipes for making sauce, you must first obtain tomato juice or take a ready-made one. In others, the tomatoes are simply crushed in any way and the skin and seeds are left in the vegetable mass for further boiling.

Some recipes require the use of vinegar, but it is better to find natural varieties for these purposes - apple or wine vinegar. As a last resort, you can use lemon or cranberry juice.

Making tomato sauce from tomatoes for the winter is very popular in Mediterranean countries: Italy, Greece, Macedonia. Therefore, recipes are often replete with a variety of herbs and spices used. It is advisable to find them fresh, but if this is not possible, then dried seasonings will do.

Classic tomato sauce recipe

The traditional recipe for tomato sauce does not require the widest selection of ingredients:

  • about 3.5 kg of ripe tomatoes;
  • 200 g onions;
  • 10-15 g mustard powder;
  • 100 ml wine or apple cider vinegar;
  • 30 g salt and sugar;
  • 2 g ground red hot and 3 g black pepper;
  • 4 cloves.

According to classical technology, tomato juice is first obtained from tomatoes.

  1. Juice can be obtained using a juicer.
  2. Or use the manual method, in which tomatoes, cut into slices, are first heated under a lid in any convenient container. And then they are rubbed through a sieve, removing seeds and remaining skin.
  3. Then the resulting juice is poured into a saucepan with a thick bottom and boiled until the volume of liquid is reduced by one third.
    Important! During the first half of cooking, all foam that forms must be removed from the tomatoes. Later it stops forming.

  4. Then add salt, spices, mustard and finely chopped onion to the tomato puree.
  5. Cook over low heat for another 5-10 minutes, add vinegar.
  6. Pour hot into jars and additionally sterilize: 5 minutes for half-liter jars, 10 minutes for liter jars.

Tomato, pepper and garlic sauce

You will need:

  • 5 kg of red ripe tomatoes;
  • 1.5 kg of red bell pepper;
  • 1 pod of hot pepper, also preferably red;
  • 2-3 heads of garlic;
  • 150 g carrots;
  • 100 g each of dill and parsley (if necessary, fresh herbs can be replaced with dried ones);
  • 60 g salt;
  • 100 g vegetable oil.

And it’s very easy to create such a delicious tomato sauce for the winter using this recipe.

  1. All vegetables need to be thoroughly washed and all excess removed.
  2. Then, after cutting them into small pieces, grind each vegetable through a meat grinder into a separate container.
  3. First put the grated tomatoes into the pan and cook for about 30 minutes.
  4. Then add the peppers to them and cook for another 15-20 minutes.
  5. Finally, add ground garlic and herbs, vegetable oil, salt and cook for the last 5 minutes.
  6. At the same time, sterilize small jars over steam or in the oven.
  7. Boil the lids in boiling water for about 10 minutes.
  8. Place the prepared sauce into jars and roll up.

Spicy tomato sauce for the winter

In order for it to finally conquer lovers of everything spicy with its vigorous taste, you just need to add 3-4 pods of hot pepper instead of one and certainly red. Because red is the hottest. And if you add a few horseradish roots to the ingredients, then both the taste and aroma will be more than worthy.

Tomato sauce with garlic for the winter

But according to this recipe for the winter, tomato sauce is prepared quite quickly, and although it cannot be called very spicy, garlic still gives it both aroma and piquancy in taste.

To start, you can prepare a small portion of the sauce, for this you will need:

  • 200 g of tomato fruits;
  • 20 g garlic (5-6 cloves);
  • 20 g green onions;
  • 20 g parsley;
  • 20 g hot capsicum;
  • 5 ml red wine vinegar;
  • 20 ml vegetable oil;
  • 3-4 g salt.

Preparation:

  1. The skin of the washed tomatoes is cut crosswise, they are poured with boiling water for 30 seconds, and then placed in cold water.
  2. After this, all the fruits are peeled and placed in a blender bowl.
  3. Green onions and parsley are cut into small pieces and sent there.
  4. The garlic is peeled, divided into cloves, and the hot pepper is freed from tails and seeds.
  5. Add them to the tomatoes along with salt and chop.

  • 3 kg of tomatoes;
  • 1 kg of pears;
  • 2 kg of sweet peppers;
  • 200 g garlic;
  • 1 bunch of basil (100 g);
  • 2 hot peppers;
  • 1 kg of onion;
  • 30 g salt;
  • 200 g sugar;
  • 150 ml vegetable oil;
  • 100 ml apple cider vinegar.

Preparing tomato sauce with basil for the winter according to this recipe is simple, but quite time consuming.

  1. First, all vegetables and fruits are washed in running water and dried on a towel.
  2. Then they are freed from all excess and ground into pieces in any convenient way: you can use a meat grinder, you can use a blender, you can use a food processor.
  3. All ingredients, except basil, garlic and hot pepper, are combined in one pan, put on fire, heated to a temperature of +100°C.
  4. Add salt, sugar and vegetable oil and cook over low heat for about 40 minutes.

  • 6 kg of tomatoes;
  • 5 pieces of large sweet and sour apples;
  • 2 pods of hot pepper;
  • 100 ml sunflower oil;
  • 120 g salt;
  • 300 ml apple cider vinegar;
  • 400 g sugar;
  • 2 teaspoons ground black pepper;
  • 4 cloves of garlic.

And preparing it according to the recipe is not quick, but it is easy.

  1. Tomatoes, apples and hot peppers are freed from excess parts and cut into small convenient pieces.
  2. Next you need to grind them to a puree. You can use a meat grinder for these purposes, or a blender - whatever you have on hand.

  • 200 g honey;
  • 6 pieces of cloves;
  • 100 g apple cider vinegar;
  • 5 g cinnamon;
  • 7 g each of ground black and allspice.

Even if there is little food in the house, you will definitely find the ingredients for this delicious sauce - the main thing is that there are tomatoes:

  • 2.5 kg of tomatoes;
  • 2 pieces of onions;
  • 40 g salt;
  • 1 teaspoon each of ground black and red pepper;

You will need:

  • 5 kg of tomatoes;
  • 2 heads of garlic;
  • 500 g onions;
  • 30 g tarragon greens (tarragon);
  • 60 g salt;
  • 150 g sugar;
  • 0.5 g ground black pepper;
  • vegetable oil - 1 tbsp. spoon into a half-liter jar.

Preparation:

  1. Tomato fruits are steamed in a colander over steam until softened.
  2. After cooling, rub through a sieve.
  3. Separately, chop the garlic, finely chop the onion and herbs with a knife.
  4. Mix all the ingredients in one pan and boil for about 2 hours until the volume of the entire mass is reduced by half.
  5. Add spices and herbs and mix.

  • 7 kg of ripe tomatoes without peel;
  • 1 kg of peeled onions;
  • 1 head of large garlic;
  • 70 ml olive oil;
  • 400 g tomato paste;
  • 100 g each of basil and parsley;
  • 200 g cane brown sugar;
  • 90 g salt;
  • 1 package (10g) dry oregano;
  • 4 g (1 tsp) each of ground black and hot red pepper;
  • 30 g dry ground paprika;
  • 150 ml red wine vinegar.

And preparing it is not as difficult as it might seem.

  1. At the first stage, the tomatoes are peeled by making a small cut in the skin in the shape of a cross and placing the fruits alternately in boiling water for 30 seconds and then in cold water.
  2. Then the tomatoes are cut into small pieces and placed in a large saucepan and placed over medium heat.
  3. Cook with occasional stirring until the total volume is reduced by 1/3. This usually takes about two hours.
  4. At the same time, finely chop the onion and fry it in olive oil until golden brown.

Tomato sauce can be thickened by boiling for a long time, adding apples, starch or... nuts.

According to the recipe you will need:

  • 1 kg of tomatoes;
  • 300 g peeled walnuts;
  • 8 garlic cloves;
  • 100 ml lemon or pomegranate juice;
  • 7 g ground red pepper;
  • 5 g Imeretian saffron (can be replaced with marigold flowers);
  • 100 g chopped green cilantro.

Making this tomato sauce at home is not that difficult.

  1. Chop the tomatoes, place on the fire and cook for about 20-30 minutes.
  2. Grind the nuts through a meat grinder and grind with pepper, garlic and salt.

  • 7 cloves of garlic;
  • 50 g salt;
  • 3 g each of hot and black ground pepper;
  • 250 g sugar;
  • 90 ml wine vinegar.

Manufacturing:

  1. Pour the tomato juice into a saucepan, set to heat and after boiling, cook for 15-20 minutes.
  2. Add spices and finely crushed garlic.
  3. After 10 minutes, add vinegar.
  4. Dilute potato starch in 150 g of cold water and, with constant intensive stirring, gradually pour the starch liquid into the tomato sauce.
  5. Heat again to a boil and after cooking for five minutes, pour into sterile glass containers.

It’s not for nothing that tomatoes brought from the Krasnodar region are particularly sweet and juicy - after all, in these parts the sun generously saturates all vegetables and fruits with its warmth and light. So the recipe for Krasnodar tomato sauce for the winter has been popular since distant Soviet times, when every housewife could easily prepare it.

The ingredients include:

  • 5 kg of tomatoes;
  • 5 large apples;
  • 10 g paprika;
  • 200 ml sunflower oil;
  • 4 buds of cloves;

  1. You need to prepare a little more plum, about 1.2 kg, so that after pitting, exactly 1 kg remains.

If you add a bunch of cilantro and a teaspoon of paprika powder to the ingredients of the previous recipe, removing the basil if possible, the resulting sauce will have a completely different taste, no less interesting.

And Italian tomato sauce cannot be imagined without a whole set of fragrant spices with the addition of traditional olive oil.

Attention! If possible, it is advisable to use fresh herbs.

Find and prepare:

  • 1 kg of ripe and sweet tomatoes;
  • 1 onion of sweet varieties;
  • 3 cloves of garlic;
  • 50 g fresh (10 g dried) basil;
  • 50 g fresh (10 g dried) oregano;
  • 30 g rosemary;
  • 20 g fresh thyme (thyme);
  • 30 g peppermint;
  • 20 g garden savory;
  • 50 ml olive oil;
  • 30 ml lemon juice;
  • 50 g brown sugar;
  • salt to taste.

  1. Peel the tomatoes, transfer them to a saucepan and cook until a homogeneous liquid mass is obtained.

The multicooker is very convenient to use for cooking tomato sauce, among other things. True, the consistency of such a sauce turns out to be quite liquid, but it retains more useful substances.

You need to prepare the following products:

  • 2 kg of tomatoes;
  • 1 onion;
  • 3 garlic cloves;
  • ½ teaspoon each of dry basil and oregano;
  • 3 g ground black pepper;
  • 20 g sea salt;
  • 30 g granulated sugar;
  • 8 g citric acid.

And cooking in a slow cooker is, as always, easy.

  1. Tomatoes are cut into pieces of any convenient shape and size.
  2. Peel the onion and garlic and chop it as finely as possible.
