Moss mushrooms of various types are popular representatives of the forest kingdom, from which many nutritious, tasty and healthy dishes with an amazing mushroom aroma are prepared. The yellow-brown moss mushroom grows in most Russian regions and belongs to the Boletaceae family, the Maslyat genus. This mushroom reveals its taste qualities most fully in pickled form.

What does a yellow-brown moss fly look like?

According to the description, the yellow-brown moss fly (other names are motley butterfly, sandy or marsh moss, marsh moth) at a young age has a gray-orange cap color.As it matures, the color becomes brownish, with a red tint, and subsequently acquires light, ocher tones. Young fruiting bodies are distinguished by a semicircular cap, from 5 to 15 cm in diameter, the edges of which bend downwards, and its surface in young individuals is pubescent, gradually cracks and becomes covered with small scales, which, however, are not observed in old specimens. Often, during prolonged precipitation, mucus appears on the surface of the yellow-brown flywheel.

The bottom of the cap is completely covered with tiny tubes attached to the stem. The color of the hymenophore is light orange, yellow, and later dark olive. The solid stem of the mushroom has a club-shaped or cylindrical shape, in some cases it can be curved. It grows up to 9 cm in height and 3.5 cm in thickness. The color of the leg is yellow, lemon, with a reddish tint at the bottom. Its surface is smooth; when broken in air, the flesh turns blue. The mushroom exudes the aroma of pine needles. The pulp is tasteless when raw.

Where does the yellow-brown moss fly grow?

Yellow-brown moss moths live on sandy soils in mixed and coniferous forests. They are found throughout the western part of Russia, in the Siberian and Caucasian regions. This mushroom is also well known in European countries. It can also be found in damp, swampy places covered with damp moss: the taste qualities of such representatives are in many ways inferior to the yellow-brown moss mushrooms growing in the forest. Variegated butterflies love to settle in small groups on peat bogs, interspersed with heather. Alone, these mushrooms are much less common. They bear fruit from mid-summer (July) until the end of September.

Sand butterfly is a category 3 edible mushroom. Its taste and quality are mediocre, but when marinated they are fully revealed. Yellow-brown moss mushrooms are low-calorie, which allows them to be widely used in dietary nutrition. And vegetarians value their high amino acid content, comparable to meat, which makes these mushrooms a particularly valuable and healthy product. The composition also contains vitamins A, C, PP and D. As for vitamin D, its content in moss mushrooms exceeds the amount of a similar substance in butter. Molybdenum, which is a rare and valuable trace element but is found in sufficient quantities in yellow-brown molybdenum, also brings great benefits to human health.

Like all other mushrooms, yellow-brown moss mushrooms contain quinine, which makes them difficult to digest by the digestive organs. People with diseases of the gastrointestinal tract are not recommended to abuse them, and in the stage of exacerbation of chronic diseases - to completely exclude them from the diet.   2. Wood moss, the cap and leg of which have the same red-brown color, dense solid flesh. The mushroom does not have a distinct odor and prefers to grow on stumps or soil covered with sawdust. Inedible. Rarely found in Russia, more often in Europe, in mixed pine forests.

Collection rules

Moss mushrooms are collected in dry weather in mixed and coniferous forests, where pine tree species predominate. Fruiting bodies are cut off completely, avoiding overgrown, old specimens. Young ones, whose cap is no more than 5 cm in diameter, are best suited for preparing delicious culinary dishes.

Use

In the yellow-brown butterflies, the fruiting bodies are completely consumed. Both caps and stems have dense flesh, which is excellent for pickling and frying. Having brought mushrooms from the forest, they immediately begin cleaning and removing debris. The skin is very difficult to separate from the pulp, so it is not peeled, but washed thoroughly. First, the fruiting bodies are boiled for 15 - 20 minutes. in salted water. Next they are marinated or fried with onions.

Recipe for classic pickled moss mushrooms.

Ingredients:

  • 1 kg of mushrooms;
  • 1 tbsp. l. vinegar essence;
  • 1 tbsp. l. non-iodized salt;
  • spices - several cloves of garlic, cloves, peppercorns, bay leaf.

Cooking algorithm:

  1. Fruit bodies that are too large are cut after preliminary cleaning.
  2. Place the boiled mushrooms in a colander to drain all the water.
  3. Prepare a marinade from the indicated ingredients (except vinegar and garlic).
  4. Add mushrooms to the marinade, cook for 5 minutes, add vinegar.
  5. Package the mixture into sterilized jars, after putting a few cloves of garlic in each jar.
  6. Pour 1 tbsp on top. l.sunflower oil and cover with plastic lids.
  7. After cooling, put it on the bottom shelf of the refrigerator or in the basement.

You can also store variegated boletus in dried form. To do this, small specimens are strung on a thin thread and hung in a well-ventilated, sunny place for 20-30 days. The finished fruits do not break, they are elastic and strong. For winter consumption, variegated boletus can be frozen by first boiling it using the above method. The prepared fruiting bodies are placed in disposable containers and placed in the freezer.

Important! When pickling yellow-brown moss mushrooms, you should not overuse spices, which can interrupt the natural, unique aroma of mushrooms.
