  2. The prepared plums are placed in a glass jar. For the quantity indicated in the recipe, it is enough to take a 3 liter container. If there are several servings of plum, you will need a large bottle of 10-20 liters.
    Advice! It is better to use a bottle with a wide neck, otherwise it will be problematic to remove plums from it later.
  3. Plums poured into a jar are poured with vodka. According to the amount specified in the recipe, it should lightly cover all the fruits on top. You can use more vodka, but then the plum will turn out less rich.
  4. The jar is closed with a plastic lid, the contents are shaken, and sent to the cellar or closet. Over the course of a month, the plum is shaken periodically.
  5. After 30 days, the vodka will take on the color of plums. All the liquid is poured into another jar and put in a closet. The alcoholized plums are covered with sugar, covered with a lid, and stored in the cellar for a week.
  6. After 7 days, the sugar will melt, and alcoholized juice will drain from the plum pulp. The resulting syrup is drained and mixed with vodka already infused with the fruits. This product can be called slivyanka, but it is still raw.
  7. The tincture is bottled and left to settle for another month. The drink is considered ready when it turns a transparent burgundy color in the light. There will be a layer of sediment at the bottom of the bottles. The liquid must be carefully drained. Can be filtered through cotton wool and gauze.

Slivyanka at home without vodka

Slivyanka prepared without vodka, moonshine or alcohol cannot be called a tincture. Essentially it is plum wine. The drink is produced by natural fermentation of fruit pulp with sugar and yeast. It will take much more time, but such a product is considered more useful.

From the recipe ingredients you need to prepare:

  • blue, very overripe plums – 2 kg;
  • spring or purchased bottled water without chlorine - 2 l;
  • loose sugar – 1 kg;
  • medium-sized lemon - 1 piece;
  • yeast – 15 g.

After preparing all the ingredients according to the recipe, start preparing the plum:

  1. The pits are removed from the plums. You don't have to worry if the pulp gets crushed.The finished mass is then pressed down with a press, poured with boiling water and left in this form for three days.
  2. After three days, all the liquid is expressed into a bottle. The cake remaining under the press is thrown away. Add sugar and squeezed lemon juice. Yeast is poured in after dissolving it in warm water.
  3. The contents of the bottle are stirred with a wooden stick until the sugar is completely dissolved. A rubber medical glove with a pierced hole is put on the neck of the bottle or a water seal is placed.
  4. The fermentation process lasts about a month. It all depends on the ambient temperature and yeast activity. The end of fermentation is determined by the falling glove or the cessation of gurgling of the water seal.
  5. Carefully drain the cream from the bottle through a PVC tube so as not to trap any sediment. The finished product is bottled and sent to the cellar.

Slivyanka will be ready in about six months. The first samples can be taken after the New Year holidays.

Slivyanka at home - a simple recipe

The uniqueness of the recipe lies in the use of spices. Due to ginger and cinnamon, the drink is good for warming up when you have a cold or just in the cold.

Ingredients you will need:

  • hard ripe plums – 2 kg;
  • vodka – 1.5 l;
  • loose sugar – 0.3 kg;
  • fresh ginger root – 20 g;
  • cinnamon – 5 g (it is better to use a stick rather than powder).

To prepare plum sauce according to a simple recipe, follow these steps:

  1. The plums are washed, the stems are removed, and they are given time to dry. Without removing the seeds, the fruits are placed in a jar.
  2. Cinnamon and ginger are crushed into small pieces and sent to the plums. Sugar is also added here and everything is filled with vodka.
  3. The jar is covered with a lid and sent to the cellar for a month.

Due to the use of whole fruits, the tincture will not be cloudy.After a month, it is decanted, bottled, cooled, and served.

Slivyanka with alcohol

The use of alcohol for infusion makes the plum harder. For a cooling sensation, this recipe usually includes sprigs of fresh mint.

From the recipe ingredients you need to prepare:

  • ripe plums – 2 kg;
  • medical or food alcohol – 200 ml;
  • loose sugar – 0.45 kg;
  • fresh mint - 5 medium sized sprigs.

Instead of mint, you can use lemon balm in the recipe, but it all depends on your taste preferences.

The drink preparation process consists of the following steps:

  1. Washed and dried plums without stalks are cut into two slices and the pit is removed. The pulp is ground in a meat grinder or blender and left to settle for 2 hours.
  2. They try to squeeze the puree through cheesecloth as much as possible to get the juice. All the cake is thrown away.
  3. Plum juice is mixed with alcohol, sugar, and poured into a jar. Throw in mint sprigs, close the lid, and put the jar in the cellar to steep for two months.

The finished product is filtered through cotton wool. Slivyanka is bottled, left to steep for another 2 weeks, and only then they begin to taste it.

Homemade slivyanka with honey

The recipe for a tasty and healthy drink is based on using honey instead of sugar. Ingredients you will need:

  • ripe plums – 3 kg;
  • plum pits – 30 pieces;
  • food or medical alcohol – 1.5 l;
  • vodka or homemade moonshine – 1 l;
  • honey (preferably flower) – 0.75 kg.

To obtain the drink, follow these steps:

  1. The washed plums are divided into slices and the cores are removed. The bones are not thrown away, but 30 pieces are wrapped in gauze. The package is placed at the bottom of the jar.
  2. Plum slices are also placed in a jar and filled with alcohol.The contents of the container are infused with a lid for 6 weeks.
  3. After the expiration of the period, the infused alcohol is drained. The bones and gauze are carefully removed and discarded. Plum slices are poured with liquid honey, left for 2 weeks, shaking the product periodically.
  4. Honey from plums will draw out the remaining alcoholized juice. The resulting syrup is drained. The plums are not thrown away, but filled again, only this time with vodka. After three weeks, the infused liquid is drained.
  5. The resulting three tinctures are mixed. Slivyanka is sent to the cellar for two weeks. After sediment appears, the tincture will become transparent. The product can be drained and served.

The remaining alcoholized sweet plums are used for desserts, served with meat, and to decorate cakes.

Quick cream with orange zest

If a family holiday is planned in 1-2 weeks, slivyanka can be prepared according to a quick recipe. Ingredients you will need:

  • slices of ripe pitted plums – 1 kg;
  • loose sugar - 2 cups;
  • vodka – 2 l;
  • chopped orange zest - 3 teaspoons.

Cooking method:

  1. Plum slices are crushed into small pieces and poured into a jar.
  2. Remove the zest from the orange without touching the white shell, as it gives bitterness. The orange peel is crushed with a knife, poured into the plums, sugar is added, and everything is filled with vodka.
  3. The slivyanka is infused for at least a week, and then it is drained through a gauze filter.

After cooling, the drink is served to the table.

Slivyanka from dried plums with moonshine

You can call it a completely homemade plum if you cook it with moonshine. This recipe requires the following ingredients:

  • homemade moonshine, double distilled, strength not exceeding 45% – 2 l;
  • prunes with pits – 0.5 kg;
  • loose sugar – 200 g.

To prepare the drink, follow these steps:

  1. The prunes are washed without removing the pit and placed in a jar.
  2. The fruits are covered with sugar and filled with moonshine. To infuse, the jar is placed in the cellar for two weeks.

The finished tincture is drained, filtered through cheesecloth, and bottled. Prunes can be used at your own discretion.
