White mushrooms (white trumpets): recipes and methods for preparing mushroom dishes

White mushrooms or white mushrooms are one of the most common types of mushrooms, but very few people recognize them, much less place them in their basket. But in vain, since in terms of composition and nutritional value these mushrooms belong to the second category. They can be compared with milk mushrooms and saffron milk caps. Preparing white mushrooms is as easy as russula, rows and other lamellar mushrooms. You just need to be aware of some of the features of their preparation, without observing which you can be disappointed in these delicious gifts of the forest from the very beginning.

How to cook whites

The name of the mushrooms is more familiar than the white mushrooms. Meanwhile, whites are just the same little waves with caps of white and milky colors. Just like ordinary wavefish, their caps have patterns in the form of concentric circles.Under the cap you can also find a kind of fluffy fringe, which serves as a distinctive feature of all the mushrooms from other similar mushrooms. White mushrooms differ only in the slightly smaller size of their caps; their diameter rarely exceeds 5-6 cm. Young mushrooms with a cap diameter of about 3-4 cm are often found.

When cut, white milky juice is released from them, which is very bitter, although the aroma emanates from them pleasant, filled with freshness. It is because of the bitter taste that these mushrooms are classified as conditionally edible. Although this only means that they cannot be consumed fresh. You can prepare various dishes from them only after special processing, when the white mushrooms turn into mushrooms that are very tasty and healthy in composition.

Like other fried mushrooms, white mushrooms are used primarily for salting and pickling. Due to their strength, they make wonderful preparations for the winter: crispy, spicy and aromatic. But this does not mean at all that white volnushka is not suitable for preparing everyday dishes.

How to properly prepare whites so that they do not taste bitter

It is important to start processing whitefish as soon as possible after they are brought from the forest so that they do not begin to spoil.

After the usual procedure of sorting and washing, traditional for any mushrooms, they begin to clean the white mushrooms. Here it is important not so much to remove debris from the surface of the caps and renew the cut of the stem, but to clean the cap from the fringe covering it. It is in it that the maximum amount of bitterness contained in whites is contained.

In addition, it is advisable to cut each cap into two parts to ensure that there are no worms. This may be especially relevant in dry and hot weather.

After all these traditional procedures, before you begin to directly prepare the white waves, they must be soaked in cold water. So that the milky juice goes away, and with it all the bitterness and other possibly unpleasant properties of white mushrooms.

If desired, soak the white trumpets for up to 3 days, making sure to replace the water with fresh water every 10-12 hours.

How and how much to cook whites before cooking

To finally prepare the whites for use in any culinary recipes, they must be further boiled. Depending on the further methods of preparing mushrooms, white mushrooms are boiled:

  • twice in salt water, each time for 20 minutes, always pouring out the intermediate broth;
  • once for 30-40 minutes with the addition of 1 tsp. salt and ¼ tsp. citric acid per liter of decoction.

The first method is used most often for preparing caviar, salads, cutlets, and dumplings.

The second method is used for soups and subsequent frying, baking or stewing.

In principle, preparing white mushroom for culinary processing is not so difficult, and descriptions and photos of recipes will help even novice housewives create real masterpieces from this mushroom.
